Word to the wise...really good halloumi shouldn't squeak when you eat it! ;)

I'm kind of depressed at that news. I love squeaky cheese!

This thread has made a grilled cheese sound so good!  I might have to make one for lunch or dinner today.  Grilled cheese and tomato soup make an enjoyable meal (to me).

I so agree!  I've been stalking this thread for awhile now!

I tried my hand at making one though and smoked the place out :-[  I don't know where I went wrong?  I salvaged what I could though and like Ericka I used ketchup to dip it into, I love that!  I'll try again soon and this time have it with tomato soup, yum.

I did make a tuna melt though today and it came out really well, I was so proud of myself.

Just wondering, I've never had a grilled cheese with mayo before, at least I don't think I have.  Do you put it on the bread before you grill it?  (I need to try it now and I don't want to do it wrong)

  Steve always called it 'squeaky cheese'.  And then we went to Cyprus, and learned that only inferior quality halloumi is squeaky.  Not sure why that is... ???

No worries!  I'm not sure if we can get the non-squeaky kind here anyway.  This was either something my in-laws explained to us when we were at their place in Paphos, or we read it when we were there, or both.

I think it had something to do with the kind of milk that goes into the cheese and/or particularly that it contains no preservatives.  In any case, the real deal is from Cyprus.

It's actually pretty easy to burn a grilled cheese. I find it's better to work with a lower heat and take a bit longer. And I check, check, check to make sure it's not getting to brown as I can't stand even really brown stuff. It's got to be just the brown side of gold for me!!

Also, if you are using butter in the pan as opposed to butter on the bread it might be a tad easier to smoke that way. But that's a guess from me as I never make mine that way - I find it gets too greasy for my taste.

Ahh, OK, less heat and watch it.  I'm hopeless in the kitchen!  I did butter the bread, not the pan.

It also works better if the bread isn't too soft. I had this loaf of bread and it was too hard for regular sandwiches, but perfect for grilled cheese (and french toast!). I only butter the bread and never put butter in the pan and I don't have any problems there.

I do the same. My dad always puts the butter in the pan, my mom puts it on the bread. My dad's always tastes smokier than my mom's. I wonder if it's because of the temperature people usually put it at to melt the butter.

I also like it light golden brown.  :)

Butter the bread not the pan
Use very low heat
Cover the pan with a lid for the first "half" so the cheese melts
Check, check, check, flip

I like mine perfectly evenly toasted golden brown too!

Same for marshmallows toasted on a fire - I get really obsessive about having the whole marshmallow toasted evenly and don't want one tiny corner burned if I can help it.

What makes a sandwich a grilled cheese sandwich? Is it using a frying pan? Or using American cheese?

OK, took all your advice.  PERFECT!  I'm loving this grilled cheese. (I even tried it with the mayo) I'm eating it with a tin of Cream of Tomato soup and it's all divine!

Do they do Alphabet soup here?  That would make this complete ;D


Chary, we used to make our grilled cheese in the toaster oven. And it's no where near as good as the pan ;D  (My mother always looking to cut out fat! :()

I did that, too! But because I liked it better than in a frying pan. And I used to use sharp Vermont cheddar, not American cheese. So I guess I haven't been eating grilled cheese sammidges all these years!??

There really is no better combo than a grilled cheese sandwich (no matter how simple or complicated you want it to be) and a bowl of (ideally) Campbell's tomato soup...
