I got a great recipe off my mother-in-law for pork tenderloin and prunes.

Soak about a dozen prunes in 150mL of dry white wine for at least an hour (with stones removed) Keep the wine when done soaking.

Slice the tenderloin into thick slices (about an inch thick). Dust the pieces with seasoned flour.

Heat butter in a pan and fry the slices until just tender.

Take out of the pan, arrange on a dish and keep warm.

Pour away excess fat, return pan to heat and pour in the wine (saved from before). Bring to a boil, scraping all the meat residues from the bottom. Stir in 1/2 tbsp of of redcurrant jelly and boil over a high heat until reduced to a syrupy consistency.

Stir in 150 mL of whipping cream and reduce until sauce is nicely thickened. When almost done pop the prunes in to warm through. Add a splash of lemon juice (optional) and season with salt and pepper and pour the sauce over the pork.

I usually serve with rice.

carnitas please!  I've tried making it before and it never seems to turn out right.

( I feel kinda funny asking a vegetarian for meat recipes! :) )

Hee hee that's ok!

Ok I'll give you the recipe just as it is in my book because I took huge liberties with it last night.

Recipe serves 6

Ingredients:

2 dried bay leaves
2 tsp dried thyme
1 tsp dried marjoram
1.5kg/3lb boneless prok
3 garlic cloves
1/2tsp salt
200g/7oz/1 cup lard
1 orange cut into 8 wedges
1 small onion, thickly sliced

Grind the bay leaves, thyme & marjoram together to make a fine powder.

Cut pork into 2 inch cubes and place in a non metallic bowl. Add herbs and salt. Rube herbs mixture into the meat. Cover and marinate at least 2 hours.  Heat the lard in a flame proof casserole. Add the pork, orange, garlic cloves & onion. Brown pork cubes on all sides. Using a slotted spoon, lift out onions & garlic and discard. Cover the casserole and cook over a low heat for anout 1 1/2 hours.  remove lid, take out orange wedges 7 discard.  Continue to cook, uncovered, until all the meat juices have been absirbed and the pork cubes are crisp on the outside & tender and moist inside. Serve with warm tortillas and asalsa ...

Salsa recipe

small bunch of fresh coriander
1 white onion
8-10 pickled jalapeno slices
3 tbsp freshly squeezed orange juice

Chop the corinader, onion and jalapenos and combine with the orange juice. Cover & chill until required.

We usually have them pan fried after dredging them in a bit of flour and herbs, then in a bit of egg, then back in the flour and herbs then fry in a bit of oil until browned on each side and no longer pink in the middle. For the herbs I usually use some garlic powder, dried parsley and thyme, salt and pepper. They're pretty easy and yum with mash. Not exactly low-fat though since they're breaded and fried.

Wow, there's loads here...he's going to be in Pork heaven (and i'm going to do that domestic goddess thing...memorise the recipes and then pretend to have just thrown it together...i think he'll buy it!)

Nope, but i'll happily get one if you think it's a necessary for the kitchen...i might get into this cooking thing

That's the thing - once you make a few "recipe" things, you can then just kind of throw things together on your own and make your own specialties eventually!

We have pork burgers from time to time - just treat them like beef or lamb and toss in whatever sounds good at the time. The pork ones are particularly nice with apricots and pine nuts chopped up in them!

I think I've posted a really interesting chinese-style minced pork recipe. I'll see if I can find it and post the link, otherwise, I'll get back later and post the recipe...
