help Cajun Christmas dishes?????

This will be our first Christmas together, here in our own home,  with me cooking for hubby (poor sod), I dont just want to serve a traditional British Christmas dinner, i want to have some of his home food right there, the problem is i don't know where to begin to look. The kids and I spent last xmas, with him at his dads house in lafayette before he deployed, and OMG the food was to die for, but i could not even tell you what we had. I know we Gumbo on Christmas eve.

On Christmas day we had, lots of side dishes, i know we had green beans, but they had a dressing on them that made them taste wonderful. Also sweet potatoes, cut up with i think pecans on, again tasted great but don't have a clue how to cook them, plus lots of other sides, all i know is that they tasted good ( i should have been paying more attention, plus i dont really speak with his family so cant get help there.).

can anyone help, have any recipes or can point me in the right direction, i have just checked out a few sites, but i am drawing a blank.

I know he would love me to cook dirty rice and Gumbo on xmas eve, which I am going to have a go at.

I am asking so early so i can use myself as a guinea pig and test out before xmas.

www.southernliving.com has some great cajun recipies.

What you'll be able to find in the UK, I am not sure, but at least you may be able to browse and get some ideas.

Maybe you could get some recipes from his family? I'm sure they'd be happy to help you!  :)

Have you tried allrecipes? You can do a search for "cajun" and it throws up loads of recipes, maybe you'll find what you want in there.

I'm not sure if it's a Christmas dish, but jambalaya is an AMAZING cajun dish.

Jambalaya isn't just a Christmas dish.  I'm in the Houston area and work with some Cajuns.  Our company has a potluck Thanksgiving dinner, and a pot of gumbo always shows up.  We've had some spicy rice dressing show up too.

Some of the stuff you're describing may not really be Cajun... just American!

You might try looking at the Thanksgiving 2007 thread,  cos im pretty sure people were talking about how to make sweet potatoes and stuff like that in there.  :)

Thanks for all the suggestions, will check out the varying sites today. Jambalaya sounds good too.
