I double roasted mine, I first washed them in water and then I threw them in a fry pan with some butter and salt just to open them up a bit and then I chucked them into the oven for about 15 mins at 190 and I stirred them once or twice until they were nice and golden brown. The double heating makes them have an extra crispy outer shell and it makes the seeds a lot less stalky.

I always make Martha's sweet and spicy pumpkin seeds. Can't imagine Halloween without them. *drool*

I accidentally left them in the oven too long last night and heard popping noises! The seeds started to pop apart and now I have to clean some seeds off the bottom of the oven!  :o  [smiley=dunce.gif]

I made some last night and they were magic.  Just a bit of olive oil and sea salt, in the oven Gas mark 5 for about half an hour.  They were perfect.

I made some last night as well, but I put Jamican Jerked spices on them....needless to say I woke up with heartburn from all the seasoning.

Another great American invention that Vicky has lapped up......

Roasted mine last night, with salt, pepper, garlic and dried chillis.  Couldn't taste the garlic, but could really taste the chillia, and they were good!

Here's the recipe for the ones that I make every Halloween. They sound a bit odd at first, but they're seriously addictive! I'll be making them tonight, yum.

Sweet and Spicy Pumpkin Seeds

Makes 1 cup

    * 1 medium pumpkin
    * 5 tablespoons sugar
    * 1/4 teaspoon salt
    * 1/4 teaspoon ground cumin
    * 1/4 teaspoon ground cinnamon
    * 1/4 teaspoon ground ginger
    * Pinch of cayenne pepper, to taste
    * 1 1/2 tablespoons peanut oil

Directions

   1. Preheat oven to 250 degrees. Line a baking sheet with parchment paper. Cut pumpkin open from the bottom, removing seeds with a long-handled spoon. Separate flesh from seeds, and reserve the flesh for another use (see Pumpkin Pie). Pumpkin should yield 1 cup seeds. Spread seeds on parchment in an even layer. Bake until dry, stirring occasionally, about 1 hour. Let cool.
   2. In a medium bowl combine 3 tablespoons sugar, salt, cumin, cinnamon, ginger, and cayenne. Heat peanut oil in a large nonstick skillet over high heat. Add pumpkin seeds and remaining 2 tablespoons sugar. Cook until sugar melts and pumpkin seeds begin to caramelize, about 45 to 60 seconds. Transfer to bowl with spices, and stir well to coat. Let cool. These may be stored in an airtight container for up to 1 week.

I have a question, how long does it take to dry out the seeds?  I took mine out this am and they are still not dry.  (I really want them now, can you tell?)

I had a large and small pumpkin and the small one yielded just as many seeds and were better quality.  How weird :-\\\\

I toss them in the oven still wet. Just bake 'em until they're dry and crunchy--if they're still damp they'll pop and spatter hot sugar all over. Which of course always happens to me, because I want them now too! ;)

I've noticed the same thing with the large and small pumpkins. One year we carved pumpkins with a friend who had a huge monster pumpkin, and it didn't really have any more seeds than a little pie pumpkin.
