Vegetarian gravy
« on: October 31, 2007, 03:28:30 PM »
I've never made much of an attempt at veggie gravy, because I was never a big gravy fan. But I'm planning to invite a bunch of people for Thanksgiving and I'd like to have something gravy-like to serve. Anybody have a brilliant recipe?

I've got an absolutely rockin' recipe but 1. I'm at work and 2. It may be only on my computer at home which means I can't get to it for a few weeks. But I'll have a dig around in my printed out recipes tonight and see if I can find it.

You'll need to find a source of Nutritional Yeast though (trust me it's worth it) - in the US I got it easily from health food/whole food stores....

Or you could take the easy way out and use Bisto veggie gravy granules. It's not nearly as good as homemade, but much quicker:

I use veggie oxo, onions, stock from the vegetables I've cooked, and a little bit of Marmite.

Sneaky quick 'gravy':  Heinz mushroom soup with Marmite for colour.

I should have said that I'm looking to do it from scratch. Maybe it's the British influence seeping in, but I'm interesting in coming up with a gravy that I'd like as well as serving it to guests. ;)

Bisto is just wrong. :-X

I agree! But some people want a quick and easy fix. Hopefully Anne can find her homemade recipe for you!  :)

You could make this garlic gravy with veg stock instead of chicken stock.
I've made it before, and it was lovely!

I have a few different ways that I make a veggie gravy. One is to fry onions in a pan, add marigold veg bouillon (dissolved in water), a tiny bit of marmite and a bay leaf, simmer 10 minutes or until the stock has reduced, add cornflour to thicken.

Another way I use a combination of marigold veg bouillion & kallo garlic stock.  Or you could use veg stock & red wine.

What veggie dish are you serving with the gravy? Some sort of nut loaf?  I used to get one from Wholefoods, but obviously that can't happen here.

I'm debating whether or not to even bother trying to make a vegetarian main dish.  Maybe just make enough sides to stuff myself!

OK, no luck yet but there's one more place I need to look. Will do that tonight. Glad to see that you can get nutritional yeast - that's a good start. I know I've got this recipe somewhere - I just know it.

I've been making crepes with a butternut squash, leek, endive, goat cheese, and walnut filling as my Thanksgiving main course for a few years now, and it's been a huge hit. Personally I can't see putting gravy on crepes, but maybe on the mash?

:-* Thanks to you and everyone else! I think I'll start doing some experimentation at the weekends. Will post what I come up with, if anything.
