Pfeffernuesse - for Pebbles!

Also called 'pepper nuts' or 'spice nuts'

3/4c clear honey
3/4c molasses
1/4 c butter or shortening (like trex I guess but I'd use butter)
1 large egg

4c sifted flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp nutmeg
1 tsp allspice
3/4 tsp cardamom
1/2 tsp black pepper
1/4 tsp anise seed
(all spices should be the ground form)


Heat honey and molasses (do NOT boil) in a pan large enough for mixing the dough in. Add butter/shortening. Cool. Beat in egg.

Sift remaining ingredients together and gradually stir into the honey mixture. Let dough stand for 30 minutes to allow dough to stiffen enough to handle.

Moisten hands and shape dough into 3/4 inch balls. Bake on lightly greased cookie sheet in a pre-heated oven (350F) for 13-15 minutes.

Let me know if you want the frosting recipe, too. But it does call for light corn syrup so we might need to figure out an alternative!

Let me know if you don't want to buy all those spices. I have a ton of cardamom I could easily send you a little bit. It's not one most people use regularly. Actually, I have all of them but the anise which, tbh, I might personally not use as I'm not a huge fan.

Quick question isn't Treacle Molasses? Or is it just that they're interchangable in recipes?   :-\\\\
