an egg wash (lightly brush the edges of the pie and the top with a basting brush) might help the crust turn out a bit more even - also depending on where you put it in the oven. we made some fantastic apple pies, but we had to use a different part of the oven than normal for the blueberry and the crust was a dark brown  :-\\\\


My husband does egg wash on frozen sausage rolls  ;D   
I have a big problem with not knowing where to place things in the oven  :-\\\\

Do you have a fan oven? If so it shouldn't matter where you put stuff.

Just remember you have to adjust the temperature!  I've learned that the hard way :(

yes! i think it affects the cooking time.

Yes, fan ovens cook faster and you need to turn the temperature down a bit.

yes!!!!!! most recipes will tell you a different temp & cooking time for a fan assisted oven.

I don't know in general how the cooking time is effected, but I believe its recommended to turn the temp down by 10degrees?

Anyone else..?

The way I heard it was ... give a man a fish, he'll eat for a day. Teach a man to fish ... he'll buy a funny hat.  :P

Ricki - reduce both the cooking time and the temp by about 20% and you should be OK. Most recipes give directions for both conventional and fan ovens these days.

Didn't you read my Just Do It about cooking in the UK? Oy.

No I don't get the Observer but my father in law does. I'll give him a ring. Q-G was kind enough to offer to give me a guide from yesterday's Guardian.

Quickly before I forget. What's the difference between caster sugar and regular sugar?
