Ooooo, do share such a recipe! I'd go to any lengths to make and eat these!
Okay, I couldn't find my recipie amongst my packed boxes (and believe me I searched high and low) but this one is really close:
INGREDIENTS
60 maraschino cherries
3 tablespoons butter, softened
3 tablespoons corn syrup
2 cups sifted confectioners' sugar
1 pound chocolate confectioners' coating (Like the candy melts you find in US craft stores- if you can't find this in the UK, I would suggest about 2 tablespoons of shortening to 2 cups of chocolate chips, to help it melt and coat easily, so you'll roughly need about 1.5 bags, with about 3 tablespoons of shortening, give or take, you may need to play around with it)
DIRECTIONS
Drain cherries and set on paper towels to dry.
In a medium bowl, combine butter and corn syrup until smooth. Stir in confectioners' sugar and knead to form a dough. Chill to stiffen if necessary. Wrap each cherry in about 1 teaspoon of dough. Chill until firm.
Melt confectioners' coating in a heavy saucepan over low heat. Dip each cherry in and place on waxed paper lined sheets. Chill until completely set. Store in an airtight container in a cool place. Best after 1 or 2 weeks.
I have made them in bon-bon molds, so that they looked very much like the storebought, and also made them like truffles, rolled into balls and rolled into cocoa. They will turn liquid in the middle- Mine, I had to keep in the fridge to prevent them from leaking, but when I wanted them to turn liquid, I would leave them out a room temperature for a few hours and then they would turn liquid.
