I really like my Forschner knives and they are rated very highly by Cooks Illustrated/Americas Test Kitchen. I bought a chef, bread, paring, and sharpner from this site for about $75.

I was looking up knives online and found this site that says F. Dick knives are marketed as Calphalon Professional Cutlery. I looked at  Calphalon's website and couldn't figure out what that is though.

That's strange. I've never heard of them being marketed as anything other than F Dick. This site just has them listed under their own name.

I hope the class went well!  :)

I second the recommendation for Henckel knives.  Excellent quality and cooking is so much easier than in the days when we had cheapie Argos knives!
I refuse to answer that question on the grounds that I don't know the answer.

The class seems like it's changed since Chary took it. No free knives.  :( They didn't focus on cutting and knives the whole time either, which is what the course description sounded like it would be. I did still have fun though. The first part of the class was demonstration by the chef, the second part was us getting to cook. The food was delicious!!! I'll have to make the risotto soon, it was my favourite thing!

The chef showed us how to truss a chicken and a roast. He also showed us how to cut apart a whole chicken, dice an onion, dice a tomato, and create a basket with a lemon. Oh, he also showed us how to fillet a salmon. We got to try out the knife sharpener if we wanted (which I did so I can try to do it at home).

I have tried countless stores and couldn't find the Forschner knives anywhere, I could only see them online and didn't want to buy them without feeling them first. I decided not to get a coat that I wanted for Christmas and that DB's family was buying me, instead I got a nice set of knives. I tried loads of knives, liked the Shun the best but it's so expensive. Just the chef's knife was over $100! My second favourite was the Calphlon Contemporary, so I got a set of that. I liked the Calphalon Katana Series, but the handle just didn't feel right, and we couldn't justify paying so much more when we weren't thrilled with the handle. Even though it was 9:00pm when I got home, I had to play with my new knives! They cut like a dream! I could actually cut through a parsnip and the carrots didn't fly across the kitchen!!

I did love the class, it just wasn't what I thought it was going to be. I LOVE my new knives so far and can't wait to cook with them! (I'm also having fun now that I've learned the better way to do hyperlinks!)

I'm glad you enjoyed it! As I said, it was a while ago. The class probably changes depending on who they have teaching it. I remember we got timed boning chickens! We had to see how many we could do in 5 minutes! It was hysterical!
