Just wanted to comment on the Sweet Potato muffins.  I made them today and they're delish!  Kind of a cross between a carrot cake and a pumpkin muffin.  Yum!  [smiley=chef.gif]

Oh goodie!  I'm glad they came out yummy!

Oh, forgot to say, I did it the oil way. I think I might try applesauce and all whole wheat flour and see how that goes, to make it still more healthy.

I made those Sweet Potato Muffins tonight and they came out really nice.  Used apple sauce and wholemeal flour.  I also used only 1/2 teaspoon nutmeg and 1 tablespoon honey.  I got 10 large muffins from the recipe and calculated the nutrition per muffin:

232 calories, 1.5 grams fat, 5 grams protein, 4.3 grams fiber, 50 grams carbs.

I used 1/2 cup raisins but no walnuts.  I considered adding ground flax seed for more fiber and omega 3's, probably try that next time.

Good tasty muffins, not too many calories and a good amount of fiber.  And the best part is the boy liked them, which is great since I made them for him to eat before he takes all his meds in the morning!  ;)

My BIL, who hates sweet potato, gobbled them up eagerly, so it's definitely a good way to sneak in some veggies!  Wonder if a zucchini muffin would work too?

I too made those Sweet Potato muffins and they came out great, I only had one sweet potato so I used carrots to make up the difference and I added a handful of bakers coconut for extra moistness...they came out great. I will be making them again...with zucchini perhaps! The girls in my office gobbled them up right away!!

Tonight I made some Banana Nut Muffins, super low-cal and high fiber.  Came out really tasty and the boy liked them!  I'm lovin those Sweet Potato Muffins though, will make them again soon!

HEALTHY BANANA NUT MUFFINS


4 bananas
1 cup applesauce
2 eggs
1 1/2 cups whole wheat pastry flour
1/2 cup ground flax seed
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup walnuts, chopped

Mix the bananas, eggs and applesauce until blended.  Combine the dry ingredients in a separate bowl, add to the banana mixture.  Don't overmix.  Toss in the nuts.

Bake at 350F for 20ish minutes.  I used my silicone muffin pans and got 11 muffins from this recipe, so nutrition info would be a bit higher but not much.

Per muffin (12):  174 calories, 6.4 grams fat, 25 grams carbs, 5 grams fiber, 5.4 grams protein.

I like this one!  I need to make some banana muffins this weekend as i have some spent bananas.  I usually make Banana Oatmeal Muffins and I like the idea of the Ina Gartner recipe with Granola but it is waaaay to hight in fat (1/2 pound of butter AND whole milk!) so I'm thinking of adapting the recipes I have to use the granola.  I'll see how it goes this weekend.

Ahh, sorry I use whole meal flour from Sainsbury.

I would think you'd need to add more sugar or other sweetener, right?
