I don't drink lattes because they have way too much dairy.  It's not the fat in dairy that gets to me usually though.  It's the sugar.  I get on a sweet craving fit if I take too much cream (or a cheese craving fit with too much cheese).

However, back in the States I used to get an iced coffee once a week as a treat (and basically, it was the only "out" treat I allowed myself).  The barrista would literally pour a few ounces of half and half into it if I didn't watch her.  I couldn't drink it if it had too much cream.  So even people who eat a diet that consists of a very high ratio of fats can be turned off by too much fat.

So, this is what I did with the pork, basically.  I sautéed some chopped garlic and onion and added green pepper, cut up pork, chopped fresh tomatoes.  I added some of the stock/gelatin from the roast and a bit of water.  I had found a hot pepper at the market today, and I added it too. I seasoned it to taste with a little bit of chili powder, salt, and white pepper.   I let it simmer a while and then removed from heat and added some Fage.  It was really good, but I am leaving out the fresh hot pepper next time.  Way too hot for my taste, but the other flavours were nice.  Mr. Moggs liked it.
