weekday breakfast ideas?
« on: January 15, 2008, 02:13:36 PM »
I'm so tired of our usual breakfast fare but can't seem to think of anything else to try that doesn't take much time during the week.

I'm not a big cereal eater and tend to get tired of whatever variety I have before the box is empty! I love bagels but am not fond of the store-bought ones here and am too lazy to make my own these days. They tend to not keep long, anyway.

I've also in the past had toast with peanut butter and banana but am sick of that and don't want to overdo the pb since I'm pregnant.

I will try muffins once I get a proper muffin tin but that won't be for another week or 2.

Any ideas? We do big breakfasts on weekends... eggs, pancakes, etc.

This may sound odd but consider the source.  ;D

What about a nice bean soup? Beans are cheap, nutritious, there's a multitude of varieties, and it could be made with ham, sausage, and potatoes. It's also warm, filling and slower to digest due to the protein content. People eat regular beans on toast here, why not bean soup with toast?  :D

i love this:

sliced bananas, strawberries & grapes with yoghurt on top & a handful of grape-nuts cereal over that.

and this:

hot, plain white rice with sugar & cinnamon & a bit of milk.

I do that, but with couscous!  Mmm.

What about granola?  It's super flexible - heat it, with yogurt, with milk, plain, etc.  I'm also a huge fan of hot cereals, which are also very flexible.

Very often (i.e., nearly every day!), I have Greek yoghurt, strawberries and strong honey.

Steel cut oats cooked in the evening are super healthy and easy to reheat in the morning.  Add your favorite chopped fresh or dried fruit.

I have several recipes for egg muffins that you can freeze and microwave in the morning, let me know if you are interested.

Hardboil some eggs over the weekend.  Great for a quite protein-fix for breakfast or lunch supplement.

I can't really talk, as I alternate between oatmeal, muesil with yoghurt, & eggs almost every weekday :P.

I do alternate a lot too.  Here are my staples:

toast with jam or pb
fresh fruits
small yogurt

greek yogurt with fruit and Jordan's Tropical muesli, sometimes a bit of honey

porridge with honey or brown sugar

smoothies with fresh fruit, fruit juice, milk

if I'm really lazy....I'll pick up a pain au chocolate or eat some boring cereal at home.

my favorite weekday bfast is a breakfast burritos!  leftover baked potatoes chopped up and scrambled with eggs, bacon, sausage, whatever veg i have.  packed into a tortilla with cheese on top.
If you harbour bitterness, happiness will dock elsewhere.

Thanks everyone. Good ideas! Can't say any one thing is jumping out at me, but I seem to be in a fussy phase again thanks to the pregnancy. I'm hungry, I need to eat, but nothing appeals. :P

I'm difficult!

My current fave is a packet of Scotts Porridge with semi skimmed milk and a handful of blueberries, and a dash of honey on top for that extra sweetness.
Mix the porridge with the milk, heat for 1 minute in the microwave, then remove and add the blueberries and cook for another minute or so until the berries burst.
Quick, easy and filling  8)

Good things come to those who wait...a really long time.
