Leftover roast beef

I haven't made much roast beef because it's just DB and I. Last week there was a great sale on roasts and we got some, but I just made one and don't know what to do with the leftovers.

What can you do with leftover roast beef? We have about two pounds left!

I'm by no means a big cook, so my ideas are probably pretty simple. But I like it if you put it in the crockpot with the packet of onion soup mix and a little water and put it on low all day. Since your roast has already been cooked, you would probaby just put it on for a few hours. Then you can use it for shredded beef sandwiches, wraps or put it over potatoes with some gravy. I also like vegetable beef soup made with roast.

'French Dip' sandwiches?

chilli with shredded beef is often nicer than chilli with mince.

Chinese curry, or Chinese crispy beef?

A woman I used to work with would make, 'spread'. When I finally got the guts to ask her what this is it was basically leftover beef that she pulverized and added mayo to to make a 'spread'. She said her daughter wouldn't eat it because often the fatty bits didn't chop up and she bit into them. Nice, huh?? Personally, I think a french dip sounds much nicer!

hey, those were going to be my ideas! LOL...you get up way too early  ;)

I just bought a roast, too, and will be making it after work.

I found a Delia recipe called rissoles.  You take the left over roast, an onion, parsley, pinch of cinnamon, breadcrumbs and an egg, mince it together in a food processor (or else do it all by hand which would take ages), form them into patties, coat with seasoned flour and fry them in a pan with just a touch of oil.  I found them to be better than they sounded, and a good way to make leftovers stretch.

We never have leftover beef. If there are bits left off the kids plates I usually give them to the dog. When I see offers on beef I sometimes will buy a large one and cut in in half and make two meals out of it.

I thought cottage pie was made with beef and shepherds pie with lamb. Or am I totally confused.

I always buy a roast that's more then the two of us can eat, just for this!!  DH prefers the 'french dip' to the actual roast.   :)

I have no idea about the difference between the two.  all I know is that my mom called it shepherds pie and we always had it after a roast beef dinner. 

I'm sure you'd be thinking about German Shepherd's pie about now!   ;)

I take leftover roast beef and throw it in the food processor to grind it up, put it in a casserole dish, add leftover gravy and beef stock if needed (to keep it moist).  Add some veggies:  I saute an onion and some garlic, add the leftover veg (if there is any) some steamed carrots if I feel like it, frozen corn or peas.  Sometimes I use cream corn if I have it.  Add some salt and pepper to taste, cover with mashed potatoes, dot with butter, sprinkle with paprika and toss in the oven until heated through.

You're right!  :)

The rissoles sound good, but I don't have a food processor.  :(

Rissoles were a leftover standby when I was a child, and my mother never had a food processor. Just use a good knife (and I know you have one!) and mince up the meat finely with everything else.

Edited to add that chicken rissoles are good, too!

We eat Roast Beef Sandwiches! Hooray! With lettuce, tomatoes, mayo, horseradish sauce. My favorite. I buy like flat breats...yummmmmy
