I am doing a quick look at Lonely Planet's Thorn Tree before I book.

We've been wanting to go forever, but haven't gotten to it yet. I have relatives in Haifa, Tel Aviv and on a kibbutz. My mom has been a couple of times and loved it!
We will definitely go within the next few years.

You should! I have a cousin that was a very controversial member of the Knesset (parliament). It is funny to meet an Israeli and mention his name and see the look on their face.

My office mate was in Israel for 4 months last year.  He loved it.  He was in Haifa.

As for Cuba, they put a removable visa in your passport on arrival, and take it out upon exit so there is no evidence in the passport. 

DH went a few years ago.  He flew through Tijuana.
