Cooking cheese sausages
« on: February 08, 2008, 09:36:05 AM »
Yes ok everyone knows I'm not a good cook but can someone give me some ideas on how to cook sausages with cheese in them? I bought some cheddar and onion pork sausages yesterday and when i put them under the grill eventually they started leaking the cheese. They still tasted very nice but how do I cook them without losing the cheese? I made sure I didn't put the grill on too high by the way but I often have this problem with cheesy sausages.  :-\\\\

Maybe "pan fry" them?  Sometimes I like to do the sausages on the hob because I can keep a closer eye on them.

Low heat to start with. Maybe put the lid on for a bit. Then, when they are close to done, turn the heat up to give them a crispy skin if that's what you like. According to Nigel Slater (one of my favorite cookery writers), sausages should be cooked long and slow this way!
When I was 5 years old, my mother always told me that happiness was the key to life. When I went to school, they asked me what I wanted to be when I grew up. I wrote down ‘happy’. They told me I didn’t understand the assignment, and I told them they didn’t understand life. ~ John Lennon

Ok I'll try. Do I put a bit of oil in the pan?

Exactly what I was going to recommend.  I use a fry pan with a glass lid, so I can see how they're doing.

And no oil!!

OK. Im going to give it a shot. I don't have a clear glass lid but I'll cover them. I'll report back. Fingers crossed I don't have to call the fire brigade!

Could you steam them? I used to cook bangers in simmering water until I was sure they were cooked through and then in a tiny bit of oil to crisp them up a bit.

I never thought about steaming. A good idea.

I attempted the pan fry. Wasn't pretty. One of the sausages split halfway open as the smoke filled the kitchen. Out of desperation I stuck them under the grill to finish them off.  :-\\\\

Did you start them on a slow heat?  And you have to turn them every once in a while.

I sympathise.  Sausages can be tricky.

Good to know! I don't eat sausages, but it's nice to know there's an easy way to do them for my bf!

Well miracles have been known to happen and we do learn from our mistakes. My disaster in the frying pan which led to an emergency grill freak-out actually led to a fantastic, CHEESY sausage!! I think the key is actually not to cook them too long. I think because my husband grills everything on extra high till it's petrified I've learned to do the same thing.
I highly recommend Tesco Finest Pork, cheddar and roasted onion sausages. REALLY nice!!!
