Steve made a gorgeous mushroom (vegetarian) lasagna for me last night & he even made the lasagna sheets from scratch & by hand.  But I think it was quite involved - that recipe! :o

But, it sounds lovely!  Please post it if you have time!  ;D

this doth rocketh:

cook up a small pan of green lentils.

saute them in olive oil with chopped spinach, a can of chopped tomatoes & a veritbale buttload of crushed garlic.

throw it all over some al dente linguine. top with a bit of mozzerella.

yumtastical!

My mum just bought me a pasta maker for my birthday...I'm going to be trying out several of these this week!

How cool!  So very jealous!  Let us know how it turns out! 

P.S. The recipe I posted is really yummy without the bacon (that is how I had mine).  ;D

I did something similar recently, but with leftover cooked chickpeas instead of lentils. Mine also had some red pepper flakes, and was topped with feta. Also yummy!
