Does anyone have a nice recipe for a carrot soup or carrot chutney? Or any other tasty carrot recipes for that matter.

No, but curried carrot soup sounds good to me!  Google & you're bound to find a curried carrot soup recipe that you fancy. :)

Or try googling carrot and coriander soup - soooo good!!

The first two recipes that came to mind were Carrot Hummus and Carrot Ginger Muffins. I've made both a bunch of times and love them. Or if you want something on the simpler side, my mom used to just put dried dill onto steamed carrots and nowadays I crave the taste combination!

There is a middle eastern restaurant near us that does a salad of raw shredded carrot, raw shredded purple cabbage, and chick peas in a lemon and oil dressing. It's SO good but I can't figure out how they managed to do it without turning the carrot and chick peas grayish purple!

I know dunking veggies in ice water helps prevent them bleeding, so maybe they do something like that?

Thanks for the ideas! I decided as carrots are so incredibly cheap we should eat more of them, but it can get boring. I hadn't thought of cakes or muffins, those are brilliant!

I made carrot cake cupcakes today to give to MIL and GrandMIL.

This sounds nice.  :)

Spicy Carrot Soup

ingredients list:

8 carrots, roughly chopped.
5 celery sticks, cut into pieces.
2 cloves of garlic, chopped.
1 large onion, chopped.
4 cups of water.
1 tablespoon of olive oil
1 teaspoon of curry powder.
Salt.

Instructions:

Heat up the olive oil in a frying pan; then fry the chopped garlic and chopped onion for 4-5 minutes.

Add a teaspoon of curry powder, then stir.

Add all of the remaining ingredients except the salt and cook until the vegetables are tender.

Mix in a blender until the soup is smooth.

Add salt to taste and serve.

(We eat a lot of carrots - it's one of the few veg we both like.)
