Breakfast Baking

Hiya All!

Just was hoping to pick your brains, really. My best friend in NY has a new job as a baker for a little Inn and needs some easy recipes for muffins, breads and cakes. Anyone have any they would like to share? She's particularly well known for her coffee cakes but wants to expand her range a bit!

Yup, I'll add this to my list and send some to you. Do you want me to IM them or post them publicly? Is it strictly breakfast or any kind of sweet baking? Also, some of my recipes are in metric measurements and some are US, will she be able to convert the metric ones?

ooo thanks balmerhon! If you want to post them publicly- please do! Maybe someone else will appreciate them, too? Otherwise, I'm quite happy to have them in a PM! It's not strictly breakfast but any savoury or sweet baking. As for the metric conversions- she would have trouble so I will do my best to convert them for her before I send on.  :D

OK, we'll start with this one, it's a favorite in our house! More to come over the next few days!

Dense Chocolate Loaf Cake (thanks to Nigella Lawson!)

225g soft unsalted butter
375 dark muscovado sugar
2 large eggs, beaten
1 tsp vanilla extract
100g best dark chocolate, melted
200g plain flour
1tsp baking soda
250ml boiling water

23x13x7cm bread tin

Preheat oven to 190C, grease and line the loaf tin (very important). Cream butter and sugar then add the eggs and vanilla, beating in well. Next, fold in the melted and now slightly cooled chocolate but don’t overbeat (you don’t want an airy mass). Gently add flour, to which you’ve added the baking soda, alternately spoon by spoon with the boiling water until you have a smooth and fairly liquid batter. Pour into the bread tin and bake for 30 mins, turn oven down to 170C and continue to bake another 15 mins. The cake will still be squidgy inside when done. Don’t overbake. Allow to cool completely in the tin. The middle may sink as the cake is dense and damp. Like gingerbread, this cake improves with age!

OK, here's a few more!

Fresh Plum Kuchen

1c sifted all purpose flour
2tsp  baking powder
1/2 tsp salt
1 tbsp sugar
2 tbsp butter
1/2c milk
3/4lbs fresh plums

1/3c white or brown sugar
1/4tsp ground nutmeg
1/2tsp ground cinnamon

1tbsp butter
2tbsp chopped walnuts

Sift together the first 4 ingredients. Add shortening and cut in with a pastry blender until the consistency of oatmeal. Add milk all at once and stir just enough to mix into dry ingredients. Spread dough in bottom of an 8 inch pie pan. Cut plums in half, remove stones and place skin side down on top of dough. Combine sugar and spices with butter and nuts until crumbly. Sprinkle over plums. Bake at 400F for 20-25 mins. Serve warm or cold with whipped cream if desired.


Cinnamon Applesauce Muffins (makes 15)

2c all purpose flour
1/4c sugar
3tsp baking powder
1/2tsp salt
1/2tsp cinnamon

2 large eggs, beaten
1c milk
1/2c applesauce
1/4 butter, melted
1/2c chopped dates or raisins

1tbsp melted butter or marg
2tbsp sugar
1/2tsp cinnamon

Sift first 5 ingredients together. Combine eggs, milk, and applesauce and stir into the flour using only about 15 strokes. Stir in butter and dates, using only about 10 strokes. Fill paper muffin cups 3/4 full. Bake at 400F for 25 mins or until done. Remove from pan, dip tops in melted butter and then in the 2tbsp sugar and 1/2tsp cinnamon.


Rosie’s Chocolate Date Cake

1/2c chopped dates
1c boiling water
1tsp baking soda
1c soft butter
1c sugar
2 eggs
1-3/4c flour
2 heaping tbsp cocoa
1tsp vanilla

1/2c chocolate chips (mini if you can get them)
1/2c chopped walnuts or pecans

Combine dates with water and baking soda and set aside to cool. After dates are cool, in a separate bowl cream butter and sugar, add eggs and beat well. Sift together flour and cocoa, then add alternately with date and baking soda mixture (don’t drain and make sure the dates are cool or the eggs will scramble!). Stir in vanilla and sprinkle top with chips and nuts. Pour into 8 or 9 inch square pan. Bake at 350 for 15 mins, reduce heat to 325 and bake another 25 mins.

Jenny, he may want to check out www.epicurious.com - tons of recipes, with ratings and reviews, so you can get an idea of how reliable the recipe is.  :)
