Red Velvet Cake

My sister was here this week and she brought me a box of Duncan Hines Red Velvet Cake mix. Whats the deal with this???

Someone enlighten me before I bake it for a dinner party...

Haven't you seen Steel Magnolias?!  ;D  It's a Southern thing.

The top layer of our wedding cake was red velvet!  And I made one last week - but didn't have enough red food coloring, so it's rather blue-tinged instead.

love red velvet cake!! It's usually chocolate, but some don't have chocolate in.

Red Velvet rocks!! I think it's a bit of a mid-west thang, too! A bit old-fashioned but making a real revival lately from what I hear.

Yum yum yum!!!  My Aunt used to make one for the holidays when I was growing up.  I usually make one for my birthday-with the cooked flour icing. 
The only problem that I have with red velvet cake is that it tends to crumble very easily.  I always find it a pain to frost. 
Never tried a mix of it though...but I bet it will be delicious.

 ;D  I need to bring my cake pans back from the US - I had a deep springform pan and a shallow sandwich tin, and nothing in between, so I had to make one thick layer instead of two regular ones - but forgot to adjust the icing recipe accordingly!  I had a tupperware container of leftover icing in the fridge for a week!  ;D

Mmmm, real cream cheese icing....even cheese-phobe Chris lapped it up!

Our family usually makes a bunny cake for easter every year where we bake the cake in round pans and then cut them in half and put them together and add paper ears and and use fluffy frosting.  Well one year, one of the family used a red velvet cake and when the kids cut the cake, it looked like the rabbit was "bleeding".  What a site!!  I know sadistic family!!  ;D

So what frosting recipe should I use???

Cream cheese, definitely!!  Here's mine:

8oz softened cream cheese
1/2 cup softened butter
2 tsp vanilla
6 cups powdered sugar

Beat the cream cheese, butter and vanilla until fluffy.
Add 2 cups of the sugar and beat well. 
Add the rest of the sugar a little at a time until you reach the desired consistency.

The one issue with cream cheese icing is that it needs to be refrigerated - we only have a tiny fridge so we've been leaving our cake in the garage!!   ;D
