Okay Delia, I finally understand.

So I just watched Delia tonight and it finally twigged with me...tonights recipes looked like things I might WANT to cook. The frozen sea bass recipe looked good, and the seafood in tomato sauce looked good. Her HOO-MOOS recipe was eh (nothing special) but it was a better show than usual.

I might have a peek at the book tomorrow.

I loved the eggplant thing, I've had it in restaurants and tried to copy it at home before in a much more long winded way. I will definately be making that one!

I bought some soy sauce the other day and there was a sticker on the bottle saying it was a DElia cheat ingredient. Why? What's so cheating about soy sauce??

Kikkoman's?  I saw the same thing when I was shopping, the usual one I buy because Ken Hom (I think) recommended that brand as the most natural without various unnecessary additions unlike most others. It's a standard ingredient to Chinese cooking - I don't see what is a cheat with it! Might as well put the label on a packet of spagetti or something!

So the book people brought her book to work and I flicked through it today. Amongst the cheats was a recipe for Eaton Mess, which is strawberries, whipped cream, sugar and meringues. I was wondering how you could possibly cheat with this, when I noticed that she specified ready made meringues. ::) It would never have occurred to me to make my own meringues!

Are they? I can't even imagine making them! I really like eton mess too, it's a perfect balance of sweet, tart and rich.

I have to say, it's thanks to Delia that I can make a non dry turkey, so I've got some respect there.

They're easy, but they're not quick. If I were in a hurry to make Eton Mess, I wouldn't hesitate to use ready-made meringues. I've done it both ways, and probably will continue to do so, depending on how much time I have.
