Haha, some of the things here are things I gave up on long ago.  Poached eggs?  You mean swirling around hot water and vinegar and making.. a very evil soup?  Eggs over-easy must be what I call 'mostly scrambled'.  And yeah, not fair withholding tips!

If your poched eggs turn into soup I'd guess that the water isn't hot enough.

I have succesfully poached eggs twice, out of about 50 attempts, so I am now an expert  :-\\\\

Cheesecake. The texture is always awful.

Racheee, the cream cheese frosting might be a UK thing. You can't buy the bricks of harder cream cheese here in the UK like you get in the US. It's all the stuff in the tub that is more spreadable that you get here.

The trick to cheesecake is to be absolutely totally anal about it.  If it says don't open the door then DON'T OPEN THE DOOR.  If it says 30 minutes then make sure it's EXACTLY 30 minutes.

I cannot for the life of me make a grilled cheese sandwich in a pan...no, I'm dead serious- I always either burn it or make it so the bread is still stiff but cheese is melting everywhere... Now on a george foreman grill or in the broiler, it comes out great, but I don't know what it is with me an grilled cheese in a pan...  
I've never gotten food on my underpants!

LOL, I'm the complete opposite.  I'm a moron when it comes to broilers, grills, sandwich makers et all.

There's isn't enought time in the day for me to list all the things I can't get right in the kitchen.  I can follow recipes to the letter but it still won't come out quite right (especially cheesecakes, which my MIL has promised to help me with the next time I see her)

Roasts in general I have particular issues with (any type really but especially beef).  I've tried so many recipes, tips, etc but they always come out undercooked/just cooked enough in the middle and overcooked on the outside.  I've completely given up and now use the crock pot exclusively when doing roasts.

I can never make the first or last pancake in a batch.  Ever.  They're always mush or burnt. The rest are fine though.

Mindy I can't make pancakes either, at all, they are always burned on the outside and mushy on the inside ALWAYS.

the trick is, you dont flip them.   ;)
you just make sure the oil is deep enough to be able to sort of splash over the top of the egg, and you just keep doing that until the top is cooked!

I agree about the cream cheese here, the stuff you get here in the tub is softened so not as much flavor as the bricks you get in the States and also too soft to set properly.  There is a New York cheesecake recipe on the BBC Good Food website this month and I had a look and I see they have added some flour which will help to thicken it a bit.  I am going to give it a try but it will be awhile as when I was back in the States for a funeral recently the one thing I did buy was 3 bricks of Philly cream cheese.

Isn't the first one always supposed to be a throw-away? The last one, though ... I don't know about that!
