Butternut squash

I have a huge one to use up because I ordered two from Tesco by mistake DUH! My husband doesn't even like it and now my son is also sick of my usual pasta sauce that I put it in. Apart from soup, has anyone got any good recipes? Can I use it in muffins maybe?

That's my problem - I love it, dh hates it!

You could cut it up and put it in a curry - sometimes I can get it past dh like that.  ;)

I also have an awesome recipe for a tart - made with a roasted garlic and rosemary crust and filled with a really simple puree of just squash and butter.

Let me know if you want it and I'll dig it out when I'm home.

Not at home, so don't have my recipes, but I seem to remember that Jamie Oliver has a recipe for a roasted butternut squash salad (just rocket, squash and parmesan I think) and I also have also done butternut squash risotto.

You can substitute butternut squash in any bread/muffin recipe that calls for pumpkin.

I have a great muffin recipe if you're interested!

That's what I was going to suggest too! I don't like pumpkin pie, but when it's made with butternut squash it's tasty!

Pumpkin Apple Spice Muffins

2-1/2 c plain flour
1-1/2 c sugar (original recipe calls for 2 c but I think that's too much)
1 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp ground cloves
Dash of ground nutmeg
2 large eggs
1 cup pureed pumpkin (recipe calls for canned pumpkin- I'd puree the squash and drain well)
1/2 c veg oil
1 tsp vanilla extract
2 c peeled, chopped apples
1/4 c chopped walnuts (optional)
Streusel topping (recipe below)

Preheat oven to 350F. In a large bowl, combine flur, sugar, baking powder, salt and spices. In a medium bowl, whish eggs, pumpkin/squash, oil and vanilla. Add to dry ingredients and mix well. Stir in apples and nuts. Spoon batter into paper cups in muffin tin. Fill about 3/4 full. Sprinkle with topping. Bake about 25 minutes (until a toothpick comes clean from the center). Remove from oven and cool on rack.


Streusel topping

2 tbsp plain flour
1/4 c packed brown sugar
1/2 tsp cinnamon
1 tbsp butter, cut up

In small bowl, combine dry ingredients then cut in butter until crumbly.

Cut it in half, scoop out the seeds, braise it in soy sauce and roast it. Yummy!

Ooh that sounds good too. And easy!  :D How long do you braise it for before roasting? and do you peel it? Usually if I roast it I leave the skin on.

You just take a brush and brush the exposed parts of the squash, make sure you get the soy sauce everywhere. You don't peel it, you just roast it in the skin. It's super easy, just slice in half, put soy sauce on it and leave it in the over until its soft. And then it comes in its own bowl. ;)

I love butternut squash and often have it roasted, peel and coat with a bit of olive oil and sprinkle salt.  I also have a Gary Rhoades recipe which I just made last night, goes great with lamb chops, it's mashed/crushed with a bit of cream, nutmeg and then top with swiss cheese and pop in the oven until the cheese is golden.

I have it like that several times a week (I live alone so one big squash lasts about 4 meals!). I sprinkle nutmeg on it as well, though. Mmmm.... It's one of my very favourite foods!

I just like to roast it along with parsnips, sweet potatoes and other veggies.
