A totally naughty, but really good icing....

take a baking chocolate bar in a bowl, broken into pieces.....gently warm double cream.....pour over the chocolate.....blend.....leave until cool and then whip......

I've always had luck with the buttercream icing recipe from Wilton. Here's a link to the part of their site about cupcakes and recipes for all the different icings. http://www.cupcakefun.com/recipes/ Buttercream icing made with butter is good but may not hold up through a bake sale because it tends to get really melty. The buttercream made with crisco (sounds ick but tastes yum!) would most likely hold up better and keep that shape you're wanting.

I use that for making Boston Cream Pie.  It is so good.

UPDATE:



The frosting came out WONDERFUL...I added cocoa too make them chocolate because the cupcake is death by chocolate...KILLER.

 ;D I feel vindicated after that mess with the Dulce de Leche!

Another good thing about baking...I get so into it that I literally become so freaking exhausted and therefor I'm not interested in eating what I made!!! If someone else made them I'd probably be all over there as I didn't just bust my ass but I'm freaking exhausted now lmfao

I am the same way about baking... I get so sick of looking at them all day that I don't touch them. Probably why I always lose weight at xmas with all the xmas cookie baking... :D

The one up there ^^ the wiltons one. It's wonderful! then I just added cocoa...didn't add a particular amount just whatever looked good ha. Um the size was....*runs to the kitchen to look* Wiltons 1M star tip!

Ohhhh and I figured out why everytime my mom made homemade frosting and my frosting from my dulce de leche cake was so icky!!!

It was BOURBON vanilla!  [smiley=bleck.gif]...I was sitting at the kitchen table yesterday looking for an expiration date thinking maybe that's why it left such a bad taste but couldn't find one and LOW and behold in small writing at the bottom of the sticker it said "Pure Bourbon Vanilla"...opened it and made my mom try it...smelt just like bourbon...HORRIBLE lol.

really?...the bottle said bourbon on it. The one I bought and the other one we had in the cabinet doesn't have it on the bottle and tastes completely different.

Are the two bottles the same brand?  Perhaps one of them is just bad?  Are they both natural vanilla, and not "flavour" or "essence"?

Was curious, so looked it up and apparently it's called bourbon vanilla because it comes from Reunion, which used to be called Bourbon.
