Favorite lentil and bean based recipes

I have started cooking with lentils quite a bit lately and I love them.  Very filling and easy to season.  I have also started adding more beans to meals.

I would love it if people would share their favorite lentil recipes and bean recipes.

Lentil Casserole

Cook green lentils as directed on the package.

While that's cooking, mix in any combination you like to taste:

Tomatoes
Green Onions
Crushed Chilles
Desired Hot Sauce

Once lentils are cooked, stir into mixture. Put into greased casserole and top with your preferred grated cheese. Bake at 200 degrees celcius for 30 - 45 minutes until top is golden.

The mixture can be stored in the fridge and lasts a few days. Quick and easy!

I've posted my lentil sloppy joe recipe somewhere but can't find it now. >:(

I have a brilliant recipe for a pasta sauce with red lentils and cinnamon--I'll try to remember to post it this weekend.

Sorry if I sound like a broken record, but.... Macos (mock tacos)!

Cook a bunch of brown continental lentils (NOT puy) and optionally, some black beans in a saucepan with some stock and tons of cajun seasoning until they're really mushy (usually 45min-an hour). Then use that as the "meat" base for tacos, adding all your usual toppings into a shell or tortilla (or even pitta if we're short).

It sounds a bit "blah" but honestly, I've had more raves over this than any of my other regular dishes. I've had people (meat eaters and veggies) stick their head in the pan and lick the last bit out! I'm still continually amazed that it's my meat&potatoes boyfriend's favourite meal...

hi dar, i have some great lentil recipes, when i find my cookbooks, i used to live in egypt, and my inlaws love lentils, just let me dig out the recipes! i know they like to use lemon as seasoning.....i will get back hopefully this weekend with some..

I have a ton of the orange/split lentils. Would love some recipes using those if anyone has any.

Lentil sweet potato curry is quite nice. 
Saute some onions and garlic in a bit of oil.  Add some grated ginger, curry powder, cumin and turmeric to the onions and garlic. I've also cheated at this point and used a curry paste and honestly, it was better.
 Add about a cup of red lentils and 4 cups of water/stock.  Let that simmer for say 10 minutes and add some cut up sweet potato.  I can't give quantities as I just use up whatever sweet potato I have.  Cook until the sweet potato is cooked.  Salt to taste. 

I've also made cottage pie using brown lentils in place of the mince.

k, sometimes i get a bit lazy.

so i always keep a few jars of Patak's curry paste in the cupboard.

i like madras in particular.

and i follow the recipe on teh jar for beef curry, but instead, a i fry frozen onion and veg up first, stir in the paste, add half a tin of chopped tom and the required amount of water, and then a tin of chickpeas for a quick veggie curry.

to make the skin of tinned chickpeas a bit softer, when you remove the lid, add a teaspoon of bicarb in the liquid and stir it round.  let that sit a wee while before draining the beans and you'll have a nice, soft-skinned chickpea.

Does it have to be vegetarian, Dar? If not, I make New Orleans red beans and rice a lot...
