Huevos Rancheros con Chorizo!

Last week when I was passing through Edinburgh I stopped off at Lupe Pinto's deli in Leven St and picked up some fresh chorizos and some lovely Mexican corn meal hard-shell tacos.

This morning to my wonderment my beautiful and talented wife cooked up what is absolutely the best Huevos Rancheros con Chorizo that I have had since leaving the States more than 5 years ago. In fact, it might have been the best huevos rancheros I've ever had!

Most of you around here know my lovely and talented wife as ... Britwife! Thanks my love ... [smiley=heart.gif]

Yes... the fresh (not dried and chewy) chorizo in Lupe Pintos is fab!     They also have that chorizo paste stuff to stir into scrambled eggs.

We're lucky to have Lupe Pintos in Scotland!  :)

Can you not get it in the US?? Oh no!!!

I searched high and low for chorizo when I was last home visiting my folks - wanted to make paella for the family - and had no luck. :(

I will!!  I'm already planning on using my day-trip to London next weekend to stock up on stuff from Whole Foods and other places. :D

This'll be the first time in AGES that I'm not just passing through with 600000kg of luggage in tow - I'm looking forward to stocking up on sourdough bread and lots of cheese from whole foods, and root beer from cybercandy (though I guess I'll have to check it on the way back - I need 100ml bottles of root beer!).  Plus seeing my best friend from home as well as several other good friends!  Yay! :)

What a nice wife!! There is really good chorizo, not the dry chewy one, at Costco, FYI.

You can buy Chorizo, but just not out here in the sticks USA...though the Mexican type is everywhere. :-)
