I knew I should have posted a picture. It looks like thick slices of streaky bacon, but it's uncured. I found out after I bought it, it's slices of belly pork.

Got a delicious recipe for Crispy pork with chilli in Ken Hom's Thai cooking book.

Uses belly pork cut into cubes. You deep fry it to crisp it up, and then  make a sauce with garlic, ginger, shallots, tomatoes, fresh coriander, fish sauce, stock and lots of chopped chillis and then simmer the pork in it for 20 mins.....one of the best things I've ever cooked.
