BBQ Recipes- HELP!

Hi all  ;)

I'm going to enter Britain's Best BBQ'er comp and need an awesome BBQ recipe to cook, has anyone got any outstanding BBQ classics??  ;D

Anything I could easily practise at home would be great as I have a little charcoal grill with a hood and never normally go for anything harder than burgers!  Really appreciate suggestions!!  8)

If you make ribs...always boil them in water with beer, onion, garlic and Italian spices first. Then slather them in sauce and finish off on the grill...slowly.

Skirt Steak. Completely under-rated and under used in this country. Its thicker than US Skirt Steak, but its fantastic. YOu can marinate it in something sweet and salty (I use Sweet Chili Sauce, a touch of ketchup, and some soy sauce) and grill it. I use indirect heat on a gas grill, but its always a huge hit. You can cut it against the grain and its delish.

Also, I made some ribs in my crock pot a few weeks ago and I was surprised at how good they were.

IMO Morrisons has the finest meat of all the supermarkets in the UK, so if you have one near you, head over tere.

Or go to a butcher...one thing I love about the UK...I have a butcher...YEAH Tony the Butcher.

This is what I make when I really want to impress people.  It was the first meal I made for my now-fiance.  I guess it worked  ;)  Wow, I so want to make this now.  Mmmmm.

To make it even better, use filet mignon.  This is also really good with pork tenderloin.  Not sure if you can find OJ concentrate here though.  They also get very messy.

GRILLED STEAK KEBABS WITH ORANGE AND HOISIN GLAZE

1/2 cup frozen orange juice concentrate, thawed
1/2 cup hoisin sauce
2 tablespoons chili powder
1 1/2 tablespoons olive oil
2 teaspoons finely grated orange peel
1 1/2 pounds tenderloin steaks (about 1 1/4 inches thick), cut into 20 cubes
3 1/3 cups inch-thick orange slices
Chopped green onions
Spray grill rack with nonstick spray and prepare barbecue
(medium-high heat). Whisk juice concentrate, hoisin, chili powder,
oil, and orange peel in medium bowl; season sauce with salt and
pepper.

Place beef in large bowl. Sprinkle with salt and pepper; toss to
coat. Add 1/4 cup sauce; toss well. Let stand 5 minutes. Cut each
orange slice into 6 wedges. Alternate 5 beef cubes and 4 orange wedges
on each of 4 metal skewers.

Grill kebabs to desired doneness, brushing with more sauce and
turning occasionally, about 10 minutes for medium-rare.

Sprinkle with green onions. Serve
kebabs with remaining sauce.

Use a dry rub on your ribs too (with herbs & spices, etc) before saucing them.

Just realised that sometimes Skirt Steak in the UK is called Flank steak, its a slightly different cut, but sometimes you can get it in quite thin strips.

Hmph.  I'd enter myself, with a real KC-style sauce (hey, I was born there!) but there's no heats in my neighborhood.  Would be nice to get a free ticket back home, though!
