Bread bakers, share your tips

I know some of you bake bread and I am wanting to make some.  I used to have a bread maker in the states which I loved, because I am a fundamentally lazy person, and I could make small loaves for just 2 people and have it warm and fresh.
However, I don't have one here and I'd like to bake some bread. So anyone got any good recipes and tips for a novice breadmaker who hasn't done it without a machine or the help of my mom ( :P) ? 
I've never gotten food on my underpants!

I just made a really easy brioche bread on Sunday that is fabulous.  Great by itself or with jam on it.  The Sunday before that I made a really tasty cheddar bread that I will definitely be making again.  Let me know if either of those sound appealing to you and I'll send you the recipe.  My fiance hates Sundays because he gets so bored so we've begun a tradition of baking a new bread each Sunday.  It's really fun!

I've made saffron buns (a Cornish thing) and Portuguese sweet bread (a Rhode Island thing) without having any prior bread-making experience. They both turned out great! So I say go for it! There's something really satisfying about making your own bread without a machine!  :)

There's something really satisfying about making your own bread without a machine!

I've done both & I personally find the machine more satisfying. :)

I use Nigella recipes.  My bread is hit and miss but the rolls are always perfect.  Top tip is to never rush the second rise...which I nearly always do cos I am too impatient!

Last time I made a loaf I used this recipe and it turned out fab! Very tasty and moist. (I don't have ab readmaker either).

Me too!  To get the crust I want, I turn it off 20 minutes before the timer would go off.

I'd like that cheddar bread recipe too, please!

I posted a recipe for Brown Derby cheese bread in the cookbook awhile ago, it uses Dr Pepper, I've made it several times, it's yummy!

Sorry have a sick toddler on my hands at the mo... will post back as soon as I can!  What kind of breads do you like?  US sweeter ones?  Italian?  French?  Do you want quicker ones or ones that take time with starters?

Could I have the recipe for Portuguese Sweet bread?  I use to have it used to make french bread in Nantucket.  I loved it.
