I was just messaging my sister about Mexican food here, and how it's an emerging thing and much of it gets lost in translation. But I have not encountered carrots in a burrito yet. Thank goodness. I would cry tears of sadness.

Rubbing it in again: I made pork carnitas in the slow cooker on Friday, and when my husband came home, we put it into chimichangas, and
it was AMAZING! Somehow, I forgot to take a picture of my food. My first chimichangas in years, and my first homemade ones ever, and I didn't take a picture. *gasp* But, man... pork shoulder is back on the shopping list. It is so happening again.
