Butternut Squash

I have a rogue Butternut Squash in my veggie basket and I am lacking inspiration on what to do with it.  :-\\\\

Does anyone have any good recipes for using Squash?  :)

Butternut squash curry!!  Cut it in half, peel the outside layer off and clean the inside out.  Cut into cubes.  Heat some oil and fry some spices (cumin, coriander, chili powder, and other Indian ones if you've got them).  Put in the squash pieces along with some brown sugar, salt and some water and let it steam cook until soft.  It's gorgeous.  Here are some more detailed examples.

Just peel it, cut it into chunks and roast it with a spritz of olive oil and some S&P and a sprinkle of nutmeg. It's one of my favourite things in the world!

Or roast it, along with new potatoes, mushrooms, onions, etc. (anything, really) and a few sprigs of rosemary, then top with some good goat's cheese for the last few minutes of cooking. Delish!

Thai green chicken curry with  butternut squash is pretty ace :)

Make your own paste from galangal, green chillies,  lemon grass, lime rind/juice, coriander, fish sauce, ginger, kaffir lime leaves, cumin and soy sauce in the blender and use a tin of coconut milk for the moisture.

Boiled and mashed with butter. Its simple. Its delish. Comfort food to me!

Butternut squash is one of the best veg on earth!
I peel and cut it up, drizzle with oil, salt & pepper, roast it, then chuck it in with cooked basmati rice, jalapenos, grated cheese, cream and more seasoning... brilliant!

I had butternut squash enchiladas at a fusion mexican restaurant once in the States.  They were absolutely amazing!!!  I think they just filled the enchiladas with cottage cheese, squash, a few other chopped up veggies and covered them in red sauce and cheese.  So good!

I cooked a huge one last night so I froze half to see if I can create those enchiladas and tonight it's soup with cider.   YUM!

This is the butternut squash enchilada recipe I once used when mapleleafgirl72 & her hubby were over for dinner:

Except I think I made up a red chili sauce (using Hatch NM red chilies) to pour over the top, but I can't 100% remember to be honest.  They were very good though!  :)

Crushed pistachios!?!? I never would have thought of that, but it sounds wonderful!

Okay I'll bite (pun not intended I swear ;) ) - I'm very curious about this recipe.  Did they cube the squash and mix it together with these ingredients before roasting, or was it done in a large segment and left to scoop out later?

I really wish my husband liked squash.   >:(
