Limoncello

Has anyone made limoncello?  DH and I are going to give his friends/family bottles for Christmas and I'm wondering when we should start making it.

Any advice?

most of the recipes i Googled seem to say it needs to sit for 4 weeks.

I watched Giada DeLaurentiis make it on her show once and it was fairly easy if you've got a big enough container, the money for all that vodka and lemons, and the time to let it sit.

I made some last year and it was fantastic if I do say so myself. I let the peels sit in the vodka for 2-3 weeks but there was still some color in them so I let it sit a week longer before adding the sugar syrup. In this year's batch I will add less sugar since we did find it overly sweet, but maybe that is how it's meant to be...

After I added the syrup, I left it another month or so with peels in but swirled the container once a week. We sampled it at 2-3 weeks after the syrup addition, but left it stewing and it definitely improves with age.

I think 4 weeks is the minimum, but I'd start it sooner if possible to give it time to mellow.

The recipes I've seen say that vodka won't do the trick. Apparently, you need a higher alcohol content to get all the flavour out of the lemon peel. They say 95 proof - which isn't available in the UK. I've never tried making it myself, however, so I can't say if that's right or not.
