A soft toffee would be close enough to use in a recipe.

You can get these from Tesco, which are very similar to the little square caramels that you get in the US.
Another shameless promotion for www.mclevey.com, the best place on the internet to buy art.

Any way you could experiment by trying Carnation Caramel (the dulce de leche stuff)?

I was thinking about that too. Or else just make your own. I've never done it, but I don't think it's supposed to be too difficult.

I've done this for Banofee Pie. The easiest way is to boil an unopened tin of condensed milk in a saucepan filled with water for two hours. Open carefully! Inside will be gorgeous hot liquid caramel. Yummmm.
Ok, so I'm smug.

I've done this for a lovely thick scrummy spreadable filling for biscuits!

But you can buy it already in the tin - in caramel form (no boiling required)!  :)

Oh, you can? I had no idea.

I'm afraid I kind of like that element of danger involved in BOILING an unopened tin. It just doesn't seem right!

Yeah, I was always kind of too freaked out by that prospect, so I never tried it.  And then one day, I saw Carnation Caramel (ready made!) - right there in the tins beside where they sell the stuff you'd have to boil.  Much easier, and safer.

Just to let anyone know that buys Carnation Caramel they now do a squeezy bottle (the big ones with the flip top lid)!   ;)  Its more or less the same price as the squeezy condensed milk of the same size.

Heh. My mom's best friend exploded one once. It's been years, and I don't think she's ever managed to clean it all up. Think caramel all over your ceiling... :o

try these--they melt so well in the microwave with just a little bit of milk stirred in.

I used the soft Werthers toffees the other day to make Caramel Apples and they worked fine.  Melted them in a bowl over a pan of boiling water and added a bit of milk to get the consistency right.
