What to do with parsnips...

So we got a large parsnip in our veg box last week that is dying to be prepared some yummy, delicious way...Only I have no idea how to fix it or what would be good :)  Any ideas on how to prepare it so that it is oh so yummy?  Thanks!!!

I believed I sliced them into strips, blanched them briefly in boiling water and then sauteed the result. I have also roasted them along with a bird. I think of them, cooking wise, sort of like extra fibrous potatoes.

I always throw parsnips into a pot roast along with carrots & potatoes...

My undergraduate advisor had a signature Thanksgiving dish that she always made for the departmental dinner that was basically a carrot-parsnip puree - it was YUMMY!

I shall be watching this thread with interest, as we've had parsnips in the veg box two weeks running and expect more this week! We had roasted parsnips last night. Tonight I mashed the huge one together with a potato and a swede. Yum!

Every Christmas my mum and I have a row about my refusal to eat parsnips.  At least I am too big for her to force me now!

Dan likes them roasted with honey.

LOL! I don't mind them, but they're definitely not one of my favourites. However, with honey? They're actually pretty good!

That’s from years of your mother roasting the parsnips along with the potatoes and biting on a parsnip thinking it’s a potato…my husband has the same problem with them.

No...it's from years of having them presented to me mashed.  Though I have done that before!

Bleugh.

Potatoes are the only root vegetable I like.  I suck as a vegetarian!!!

They're good pickled, especially in the Japanese way. (Nuka).  It takes a week or two to get the mixture ready for stuff, though.

We make the Aunt Bessie's Honey Glazed Parsnips here where I work (and the Morrison's Orange Blossom Honey Glazed ones).  I have never tried any other kind, but seeing as how I started with those, I can't imagine them tasting better any other way!!!
Definitely honey roasted!!!   ;)
