Mr. K is a meatloaf convert for sure!  My recipe is pretty much the same as others...breadcrumbs, egg, chopped onion, half minced pork, half minced beef, but I add 2 heaping spoonfuls of horseradish sauce.  The last 15 minutes of baking, I top the loaf with barbeque sauce and let it cook into the meat just a bit.    Serve it with garlic mashed potatoes and green beans.  Yum.  Might have to be meatloaf night tonight!  :-)

Well, you could do it either way, but as a beginner meatloaf maker, I would think the loaf pan would be much easier....  ;)

I just slap that bad boy into a loaf and stick it in! lol

For some reason I only recently started liking meatloaf, as a kid when my mom made it I would pout, even though it basically is a hamburger and I like those lol.

Tonight is meatloaf night at my house!! Jackets, and veg. mmmmm DH agreed lol.

I usually use breadcrumbs but it's hard for me  to find them  here, so I have been leaving them out.

If you have a M&S near you I've found them in the organic / specialty food section.  I think you'll tend to find them in the specialty / special diet sections of most stores tbh (or the freezer section).   ;)

OK so I made Meatloaf and I made it in a loaf tin.  It tasted great BUT was not sliceable..I think its because I put mushrooms in it  ???

That's strange... I don't usually put mushrooms in mine, it might make it a bit mushier, I suppose.  Did you let it sit for 15-20 mins after taking it out of the oven?  Usually I let mine sit for a bit before slicing.  Also, I mix about a cup of breadcrumbs in with 2-3 eggs and make a "glue" that I briefly mix in before putting it in the loaf pan.  I think in my Joy of Cooking cookbook it says that if you overmix it, it won't hold together very well. 
Anyway, practice makes perfect, and who cares how it looks if it tastes great??!!!   ;D  I'm sure your hubby appreciated it!

I made it like this:-

1 1/2 pound mince beef.
2 medium eggs beaten.
1 cup breadcrumbs.
1 medium onion chopped really really small.
1 small tin sliced mushrooms.
1 cup ketchup
a few splashes of wostershire sauce.
Loads of salt & pepper
loads of parsley & chives

mixxed it all up and put in a loaf tin...made a little slit and put more ketchup in it and smeared it on the top..

In oven for 1 hour 50 mins on 190 degrees.

Husband said it tasted like meatloaf...just wasn't "loafy"

 ??? ???

I know some people make it in a loaf pan, but even if you are using a lower fat mince, doesn't it end up sitting in its own fat? It makes sense that the extra liquid would keep it from binding. Next time, try the same recipe and just mould it, that might help.

I make mine in a loaf tin and it is still sliceable.  I always mix the veg, seasoning, and ketchup in first, mix the breadcrumbs and the beaten eggs together in a separate bowl, then add them right at the end, just briefly mixing until its somewhat blended.  But I don't use worsty sauce or mushrooms, that would up the liquid content and maybe make it too moist to slice.  Next time try it with just onions, green peppers, and ketchup and maybe some carrots, if you like those evil things...  ;D  I also don't fry any of the veg, I just chop it up ultra-fine so it softens in the loaf.
At least it tasted like meatloaf!!   :)
