Ditto what Peedal said. I also like Monterey Jack which may also be called Pepper Jack.

Skyline Chili is from Ohio and it's wonderful...got me loving chili over any type of pasta, really.

So now that's what I'm hungry for...and it's hours till my tea time!  ;)

I usually marinade some Chicken in Olive oli and chicken and then fry it all together and there is enough olive oil to coat the pasta then i mix it with the pasta and mix in some sort of cheese. I tried mozzerella but it doesn't grate great and i cut it too big. So i needed suggestions

Hmm..I used to make something similar when I was in college, cutegirl.

Cut up chicken breast into bite-size pieces.  Sautee in olive oil and butter w/ crushed garlic until browned and slightly crisp.  Toss entire mixture over spaghetti w/ fresh black pepper and sliced spring onions.  Sometimes I did melt a little mozzarella on top of that, too!

But for chili, always use cheddar!  And a big dollop of sour cream!  Mmmmm!   ;D

Wow, is there anybody who didn't make the chicken/pasta thing?

And if you have access to them...chili over Fritos is amazing...they call them "pepper bellies" in St. Louis, and they're addictive!   Chili, cheddar, Fritos....mmmmmm....
