Topic: First Birthday Cakes...  (Read 1599 times)

First Birthday Cakes...

DD's first birthday's on Tuesday and right now DH and I have agreed on a carrot cake.  The only problem is finding a recipe to make.  I have a recipe for Annabel Karmel, but I'm so sick of looking at her smarmy face and just a bit dubious of how yummy it would be to DD & other kids of varying ages up to 5yo.  I'm intending to do a white chocolate cream cheese frosting with it.   ;)

Does anyone have a non-nut carrot cake recipe they would care to recommend?  Or even any other flavoured / creative cakes to recommend?  I'm open to ideas and nothing's ever really set in stone with me (much to everyone's infernal annoyance).   ;D

On a side note:  I've not baked a cake in quite some time.  The last time was probably 2-3 years ago, where I made the mix and DH did the tins and was in charge of the oven.   ;)  He's more the cake baker than me, but I want to do this one!

Ina Garten does a gorgeous carrot cake recipe with pineapple in it, not only is it foolproof, but its delish!

Thanks for the recipe!  Do you think it would taste alright with a bit of lemon zest and raisins or sultanas added to it?

Yes, all of those things are great. I put some lemon in the frosting to add a little bit of extra zing. Good luck! Its a big cake also!

Here're a couple photos of the cake & eater!   ;)  It turned out really well and God only knows how I managed to decorate it and not screw that up!   ;D
