Need opinions on a pie question...
« on: November 28, 2008, 01:47:17 PM »
I am dithering on this question.  If I make the following dessert pies up fresh later today:  1 pumpkin, 1 pecan, and 1 apple-cranberry - will they be okay to sit out of the fridge (in the kitchen) until serving tomorrow afternoon/evening?  Or do they really need to be refrigerated?

I don't want the crusts going soggy, but I don't want the pies to go off either.  It's not very warm this time of year, so...  I probably won't have room in the fridge but I might be able to put them out in the (enclosed) porch overnight.

Hmmmmm.  ???

The pumpkin probably should be in the fridge (contains dairy products and should be firm when serving), but the fruit and pecan ones should be ok. Just cover them well. Can you put them in the microwave? That's what I do when I don't want something completely out on the counter, but not in the fridge.

If your kitchen is as cold as mine is, I personally think they'd all be OK on the counter for one night.

The only one that needs to be cool is pumpkin- I (and my mom) have never refridgerated pecan or apple pies.  I would say in the covered porch overnight would be just fine.  That's the best thing about winter, all the extra fridge space outside  ;)

We stuck a lot of things on the patio table outside the night before... granted it's near or below freezing here in VA!

I think they'd be fine.. what's the outside temp supposed to be?

Yeah but what about the bears?!  (in VA)  :o ;)

It's cold.  But so is our kitchen overnight.  I think what I might do is leave the pumpkin pie to make for last thing tonight, take it out of the oven just before we go to bed, it's going to need to cool & the kitchen will be cool overnight.  Then I can figure something else out in the morning - probably out in the enclosed porch.

I made my lemon buttermilk pie around noon yesterday and had it sitting out in the living room on the table all day - at room temperature (not as hot as the kitchen that I was cooking in but definitely not cool!) - and I didn't poison anyone!!  In fact, the leftover slice was out all night and Chris ate it this afternoon and hasn't suffered any ill effects. :D

Well that's the thing - it's not exactly like south Florida or Georgia, etc in the summertime here...not quite anyway.  :P

Exactly.  I have vivid memories of wearing shorts and a t-shirt to Thanksgiving meals when I was a child - whereas it's supposed to be 25 degrees here tonight!!

It's cold here in GA now! Well, sort of. It was unusually warm during the afternoon (60) but it's getting into the 30s at night and is supposed to only get to 45 during the day now.
