freezing smoked salmon
« on: December 31, 2008, 08:24:19 AM »
As I mentioned in another post, we got an amazing gift of a side of hot smoked salmon. By hot smoked, I mean the drier, fully cooked type, not lox. Since there are just 2 of us and as much as I adore it, I can't see us eating it all in the week or so it recommends.

Has anyone frozen smoked fish before and does it defrost ok? I can't seem to find a definitive answer online.

Thanks!

Just another yes here.. we usually smoke all we catch, and that's a lot of fish!

We get a lot through here, so another yes, go on and freeze it.

I defrost it in the fridge.

Scottish salmon, is it?
I think it needs to be returned to its homeland!  ;)

A bit off topic, but where can you buy hot smoked salmon?

I seem to only see lox type.

I sometimes see very small portions of it in Sainsbury's... i think it's Spink & Sons brand.

You can buy it online from www.arbroath-smokie.co.uk
(I take it you've already tried the real arbroath smokies?  They are incredible!!!)
