Weird cheese Question

Hi all, here is my question....I bought a chunk of very sharp cheddar last week.  I cut a few pieces for lunch and when I was eating it, it seemed to have tiny hard crystals in it.  Is this normal?  I've never had that happen before and honestly I was grossed out by it!!!  Is it just the sharpness, or did I get a bad chunk?  I've had other cheddars and they were fine, this is the sharpest I've gone though.  Please tell me I don't have to suffer through the icky bits!!!!

I eat "5" - extremely mature cheddar and I've never had tiny hard crystals in it!  Eck!

I've had that happen when the sharp Cheddar is a little old, but has not yet gone bad or gotten any mold on it.  The "crystal" bits might be dried-out bits.

Just spoke to my English sweetie about it and she's never heard of crystalline things in Cheddar.  But I know what you're talking about....

LOL..I'm sorry...I don't mean to laugh but I know I'd be freaking out too. I just found this online though so it looks like this can happen to cheese and you are safe. :P

Thank you Melissa!!!!  It's a relief to see I am safe!  But it was gross, Just figured that was the way it was and I needed to get used to it.  Oh well.

If you really want to know if it's acceptable, I'd suggest you call Neals Yard Dairy or La Fromagerie in London - 2 of the best cheese shops around. If you got the cheese at a deli or specialty shop, it might be acceptable for hand crafted cheeses. For commercial cheeses such as in the dairy aisle at Tesco, it might not be.

I'm not sure what Melissa posted is what your are thinking of. I could be wrong, but I think there's a difference between surface white stuff and crystals within the cheese.

AHHHHHHH (again) It was from Tesco, first time I shopped there, I'm back to Sainsbury's next time!!!

It was within the cheese, ICK!!!! 

You are allowed to like it!  Everyone likes different things.  I love  Sushi, and I know loads of people who hate it!!!!

It IS normal and according to the what it said on the back of a block of cheese bought recently it is a sign of a good quality cheddar.

Hmmmm, wow!  So it said it on the back of your cheese? Mine said nothing (I think it was one cut from a big block) Oh well, I didn't like it, so I will check the back from now on and be dure not to get any that say it.  (Or it just says, it may happen so don't be alarmed!!!)

no you like good cheese! I just went and got the cheese from the firdge and this is what it says on the packaging of McLelland's "Seriously Strong Cheddar:" "Cheese may contain small white crystals of calcium lactate. These are typically found in the best quality cheddars."
