Salsify recipes? Uses?

One of the items in my veg box this week is salsify.  I have NO idea what to do with it.  Has anyone cooked/eaten this before and have any suggestions?  I've done some googling, but would like to hear anyone with first hand experience.

I know I've seen Rick Stein cook with it. Maybe see if you can find any of his recipes online as people always seem to rave about them on his show!!

No advice, but I'm anxious to see what responses you get. They always seem to be using salsify on Great British Menu and I'd love to do it myself sometime!  :)

They did something with it on Saturday Kitchen last week so check their webpage, maybe the recipe is on there.

I have never tried it either, so very interested to see what pops up here.  Always love a new food adventure.  From my investigative works, it appears that it is very similar to the parsnip.  I found it roasted, used in slaws and a puree accompaniment for fish. 

Here's the roasted version i found:

For the salsify:
Peel the salsify and slice into two inch pieces on the bias. Season with salt and olive oil. In a saute pan, add half the duck fat; pan fry the salsify, add the chicken stock and butter. Cook quickly on the stove. Reduce the stock completely and remove the salsify. Heat a clean frying pan until it's very warm, pour the remaining duck fat, and roast the salsify until it has a golden color. Season with pepper and "fleur de sel." Reserve on the side until you are ready to plate the dish.

What the heck is "fleur de sel", you ask...i have no idea!   ;)

ooh we got some in our Abel & Cole box last year, but they don't appear to have the recipes up on their site anymore. But we roasted them pretty much like described above, but we found them quite tough to peel, and then they went a bit sticky once the outside is gone, so have a bowl of water ready to dunk them in pre-oven. They were really tasty, though, so I hope we get more this year!

Yup!  hee!  With our street being the skating rink it is, I was surprised to hear them at our door the same time as usual this morning.  They're terrible looking things, but as I've learned from those little carrots, a little working over with a veggie scrub brush I bought at Lakeland can make crap shine like pearls! 

These things frighten me though.  I don't even know how to prep them.  I was hoping for first-hand accounts (thanks squirrellypoo!) of how to work with them.

I can't even see what they look like through the dirt! It looks like they brought me half the farm! ;D

I took a picture to try and explain them to friends stateside.  They look like something you'd mulch / rototill into the soil at the end of a season rather something that you'd enjoy on your dinner table.

I dug this thread out because the Guardian magazine has salsify recipes today! Fritters, tempura and gratin.

It actually looks like a pretty flower, from the picture. I hope to try cooking with it one day. Experimenting in the kitchen's always fun!
