Polenta

Hubby bought some ready made Polenta.  Whats the best way to *deal* with it? any good meal sugestions?

Crisp Italian Chicken & Polenta - I've not gotten round to making it myself as I've got about 2 bags of polenta (cornmeal) and have never bought the ready roll stuff, but it looks good & easy.   ;)

Cover it in anything you like and eat it.  You can bake it, fry it, microwave it. It's very versatile.  I like it with blue cheese and pine nuts, or with a fresh tomatoey pasta sauce.  You can put milk and sugar on it and have it for breakfast.  Seriously, anything.

Seriously, anything.  

That seems to be the case with the ready made stuff.  I've seen recipes for polenta pizza crust, so I'd assume just roll it out, bake it and turn it into a pizza.  Or after finding this page: http://www.101cookbooks.com/archives/001473.html I'd agree with Historyenne - anything goes.  But the Polenta fries do look pretty good.  I'd assume you'd just cut your log instead of making up the dough or as one of the posts nearer the bottom suggested: slice it and serve with a mushroom sauce over it.   ;)

I like to saute it with peppers and onions and top it with a pasta sauce.

I like it fried too - but with sauteed wild mushrooms.

cubes fried in olive oil along with pieces of halloumi cheese and then these things alternated on skewers along with pitted olives and sunblush tomatoes and accompanied with a leaf salad

Word of warning - unless you like bland... make sure you season it well and preferably cook it in stock rather than just boiling water. DH won't eat it because no matter how hard I try he says it's too bland and he doesn't like the texture. I really like it though....  :-\\\\

I think that's why I like with sauteed mushrooms, or anything with a sauce. Mushrooms in a scrumptious demi-glace ... the sauce seeps into the polenta ... it all gets mushroomy and squidgy and delicious ... oh, man, I want some now!!

That's a good point. I was surprised how bland it was the first time I tried it.

Like pasta, it needs more salt than you'd really expect.  But if you've got the prepackaged stuff, it should be OK.

I would eat anything on skewers as long as it was alternated with Halloumi!  :P

I agree that it does look pretty bland, it would need spritzing up a little...I will take all your advice on bord guys! thank you  :)

I slice it up and make mini-polenta grilled cheeses.  If yours came in a tube (I imagine it did), I just spray the pan with a little olive oil, and then stick small slices of cheese in between two slices of polenta.  I make 3-4 fo these little guys. Sometimes spoon a little salsa on top of them.

you can also fry it in a little butter and drizzle with maple syrup
