Naan advice?
« on: April 04, 2009, 07:31:45 PM »
I've been learning how to cook Indian food from scratch (or as close to from scratch as possible, considering I've not yet worked up to making my own curry powder).  Today I attempted naan, and it didn't turn out very well.  It was too heavy and dry, and didn't have any bubbles.  I think I might have used too much flour, but there are a lot of variables so a lot of ways it could have gone wrong.  Does anyone have any advice for how to make good naan?

It's possibly your oven temp, have you got a pizza stone? or a really heavy oven proof pan? If you put that in, let the oven get super hot, then put the naan dough onto it, it should bubble and get the outside "char" on it.

I wondered if the oven temperature might have something to do with it.  The recipe said gas 6, so that's what I set it at, but as they were baking I thought that didn't seem hot enough to get the charring on the top.  Our oven really isn't the best for baking anyway.

well you probably wont get a nice char on them in a conventional oven anyway, but i've had good results using an upturned le crueset casserole dish.
But a piece of marble would probably work well.

My sister SWEARS by pampered chef stoneware, I always want to get some, but I have no idea where to get them from. They do the same as pizza stones I think. That pizza looks AWESOME!!

It was mostly air, it just rose beautifully! :) It's  much more of an airy ciabatta crust rather than a heavy oily bread crust.

I could have sworn that there was someone on UKY who was a PC sales rep.

I wouldn't mind having a PC party, but they never got back to me! Can you believe it. Ah well, I guess they don't want my money!! To be honest, I don't have room for anymore cookware at the moment...but maybe when something big breaks!
