You'll have a fantastic time!

Some must-hit spots that aren't always touted IMHO are:

- "Per che No?" for gelato.  Located on a side street off the main drag between the Duomo and Piazza della Signoria.  Can be tough to see the sign; I think it's two streets up from the Piazza S. Avoid the uber-touristy gelato shops on the main corners... they'll upcharge you like crazy.  I pretty much ate at Per che No? once a day.  :)

- Cappella Medici - the tombs of several prominent Medicis designed by Michaelangelo.  They're awe inspiring.

On the other side of the Arno...

- Brancacci Chapel in Santa Maria del Carmine.  The frescos are amazing.  Stunning.  Includes the famous Adam/Eve painting from the opening sequence of Desperate Housewives. 

- There is a little sandwich place not quite on the Piazza Santo Spirito but just off it that I also frequented while living there.  Fresh roasted veggies and to. die. for. cheeses for your midday panino.  Then of course you can sit in the square and enjoy the scenery.  A friend was there last year and apparently they have expanded slightly from the shoebox rectangle of a store they previously had, buying out the restaurant space next door. 

If you'd like sit down restaurant recs please let me know and I'll check with my Florentine buddy who is an absolute insane foodie (even for an Italian).  Anything from great cheap pizza to the best Bistecca Fiorentina.

If you're going to try and hit the Uffizzi and the Accademia (where the real David lives) be sure to get timed reserved tickets rather than waste precious time waiting in lines!!!!
