The official ice cream/froyo thread

Hey I just bought a quart and a half ice cream maker and am going to be making ice cream.  I know my guest likes chocolate (Mrs. R.)  but would love any and all ideas.  Meanwhile someone tell me what to feed them!  ;D

They'd probably love your paella!

I have some good ice cream recipe book, but they are all sitting in Cumbria waiting to be shipped over.

My favorite is the Ben and Jerry's book but I expect you could find recipes for their stuff online.

*caveat - I've not made a lot of ice cream but we're looking to get an ice cream maker for the summer!*

I've used a few of Alton Brown's ice cream recipes from his Good Eats series (available on the Food Network site) and they've always turned out soooo good. I need to buy the stuff and make some again soon!

I have the B&J cook book but don't get that you don't temper or cook the eggs in many cases?

Will do! 

Here it is:

Carrie's Chocolate Velvet Ice Cream with Chewy Cookie Chunks

134 g caster sugar
scant 1/2 cup unsweetened cocoa powder
3 egg yolks, beaten
1 1/3 cups milk (1.7% fat)
1 1/3 cups double cream (48% fat)
~10 Cocoa Fudge Cookies

Heat the milk in a pan until bubbles just start to form around the edges.  While the milk is heating, beat egg yolks and sugar until they are lemony yellow and form "the ribbon" (as Julia Child says) when you lift the whisk out of the mix.  Beat the cocoa powder into the egg/sugar mix. Temper the eggs by adding some of the hot milk to the egg mixture while stirring.  Dump it all back in the pan and cook over low heat until the custard thickens to coat the back of a spoon, stirring continuously. 

Chill.  Add cream.  Freeze as directed.  Add cookie chunks when ice cream is nearly finished churning.

This ice cream has a slightly thicker custard than usual, so tastes super creamy! It's heavenly!

I haven't actually made the cookies that go in the ice cream before - I've used (gasp!) shop-bought ones. I have, however, made brownies and put chunks of those in the ice cream. That was perhaps the most brilliant thing I've ever done!  ;D

I make a regular custard ice cream mix and add gorgeous stuff into it...jaffa cakes being my fave

My cousin made homemade cardamom ice cream to go with a chocolate cake she made. It was to die for! It wasn't something I would have ever thought to try, but it really was delicious with the cake.

My cousin made homemade cardamom ice cream to go with a chocolate cake she made.

I love cardamom ice cream! 

I've got a delicious gooseberry ice cream recipe, if anyone's interested.  It's not for everyone, because it's a bit tart, but I love it.
