I vote for everything! They all sound great!

I do have a recipe for a new salad someone brought to a party we had last month. It would go well with Mexican fare as well as BBQ. It's must a mix of black beans, corn, avocado, shredded purple cabbage, and tomato all in a lemony vinaigrete. Healthy and delish!
When I was 5 years old, my mother always told me that happiness was the key to life. When I went to school, they asked me what I wanted to be when I grew up. I wrote down ‘happy’. They told me I didn’t understand the assignment, and I told them they didn’t understand life. ~ John Lennon

Honestly, that IS the recipe! I just wing these things most of the time... but let me try to be more specific:

1 small head purple cabbage, shredded or thinly sliced
2 ripe avocadoes, chopped
2 cans black beans, drained
2 cans unsweetened, unsalted corn, drained
1 pint of cherry tomatoes, deseeded and chopped

optional: you can add other veg (grated carrot, onion, chili, etc

Mix all veggies in a bowl.

For dressing, juice one lemon (or lime), add to 1/2 c. olive oil, and then add salt, pepper, cumin, garlic powder, and oregano to taste. (about 1/2 tsp cumin, 1/2 tsp oregano, 1/2 tsp garlic to start with)

This is best after sitting for several hours so chech your seasoning after that to see how it is. I'll try to measure better next time I make it!!

I saw a really idea on Rachael Ray, where she made mini meat loaves. She used a muffin tin, and it was such a cute idea! Little individual meat loaves, single servings. I thought it was a great idea for a get-together.

Thanks for some great ideas.... Other half is insisting it be American so i've decided, since weather is supposed to be not to great on Saturday, to go for jambalaya. I've never done it but I do like it the few times i've had it and it's different.

Think I might try corn bread with it as well. And i'm fancying attempting some decadent southern pie like peanut butter... :o

I made these, Bulgur Herb and Feta Stuffed cornish hens (poussin), a salad with beets, dried cranberries and candied walnuts and a homemade olive bread for guests and it was a huge hit. I was able to make everything in advance and just take them out of the oven to serve. It looks impressive but was very simple and not fussy in terms of having to carve or slice after cooking.

For hors d'oeuvre , I served a white bean, roasted tomato dip with homemade pita chips, blue cheese stuffed medjool dates wrapped in bacon and assorted olives.

I love dinner parties!  :)

Me too! I love the sound of those dates.....

It's not one of my favourites. And I always insist the dessert has to be something I really want...and since i'm breaking my diet for this meal, it had better be good  :P
