help me find the right chocolate!

I'm thinking about making a chocolate torte for DH for Father's Day.  He loves a good, rich chocolate dessert.  Most of the recipes I've found so far call for different kinds of chocolate--some semi-sweet, some unsweetened.  I can't remember what kinds of equivalents I'd find here.  Any advice on converting US chocolate recipes to UK ingredients?

Also, if anyone has a killer recipe, let me know.  I'm looking for a decadent flourless-type torte.  I've found them to be richer.

I use Green & Blacks for almost everything - I tend to go for the highest one (80%?) for stuff like mole and 75% for baking. But then I prefer chocolate to be more on the side of bitter than sweet....

Thanks Anne!

I was thinking I'd use a good strong dark chocolate.  This kind of dessert is rich enough without seriously sweet chocolate.  The recipes tend to have very little other than chocolate, eggs, sugar and butter. mmmmm heaven!

I usually use the same Green & Black stuff Anne's talking about. Buuuuut ... I recently picked up some of Willie Harcourt-Cooze's 100% dark chocolate! I can't wait to try baking with it!

I say go for Green & Blacks, but Lindt does also do a line of high cocoa count chocolates

I use either of those.  Usually one is on sale.   ;)

That's him! I saw him speak at the Hay Festival last month and he passed round samples. Delish!

I bought some of his 70% at Waitrose and it was different from any chocolate I'd ever tasted. It was very fruity. I can't say I loved it but I think it is what real chocolate actually tastes like.

He has a few different chocolates - from different regions. Try another!

His talk was really interesting. Apparently, chocolate makers like to keep it a secret where they get their beans. But he thinks cacao plantations should be known ... like vineyards. Some are better than others, some are crap, etc.
