My sympathies Stacey!

I've recently been diagnosed as a hypoglycemic so I am now on a low carb, sugar free, alcohol free, caffeine free, vegetarian diet. Or at least I am TRYING to be. ;D

Are you tracking your food anywhere? I am using Sparkpeople and it's pretty fun but I keep getting to the end of my day and not having any carbs left.  :(

Funny, I thought I was hypoglycemic for a long time!  I guess it's really all connected thinking about it. (With Diabetes too)
The thought of going alcohol and caffeine free scares me. (Caffeine more so though!)
I've not been tracking, but I suppose I should.  I'll take a look at sparkpeople.  Do they do low carb rather then calorie counting?

I did something like this when I was home before my wedding and lost 30 lbs in three months. (And believe me I was not ever hungry, it just fell off)  So I know it's the best way of eating for me.  But I'll miss my carbs :(

One of my firm favorites is that for tuna salad or tuna salad sandwiches, I use John West canned red (or pink) salmon instead -- flakes up just like tuna but I like it even better than tuna. This may seem strange or off-putting for early morning eating, but I often have this kind of "salmon salad" sandwich on a single open slice of bread for my breakfast, as the protein seems to give me a better start to my day physically than eating cereal, which can make me feel sluggish and tired.

Not off putting at all :D  I grew up eating lox and whitefish etc for breakfast on the weekends.  Thank you, I'll try the salmon. (I have some tuna from Costco already)

So I'm trying to reduce my carbs and do high protein, low carb diet, I've already got rid of caffeine and (mostly) sugar and I've got rid of bread and pasta and most starches, I'm only left with Brown rice (I love it :()... It's been pretty up and down, but I think I'm getting to a good place with it :)
I've been looking at vegetable carb lists on here :

but anyway, here's a couple of ideas for meails I've been playing around with :)

Chinese lettuce wraps - (minced pork/scallions/shallots/garlic/bell pepper/chillis) - stir fried together with a little oystersauce (few drops), soy sauce and some tomato puree. Served by wrapping them  up in lettuce leaves. You can add a little stock for more flavour and reduce the oyser/soy. Or if you're short on carbs not include the pepper.
Pork chops with broccoli and Creamed leeks.
Parmesan crusted chicken with creamed spinach and courgettes.


At the moment, I'm having tofu scrambles for breakfast or eggs (like fritattas, spinach scramble) with All Bran (and soy milk) on some days if I'm having a good carb day. (Eating breakfast is weird!I've never really done it before)

Lunch is where I'm falling down, today I had like an italian type thing, some chicken breast, cheeses, some salami, and sliced tomatoes with basil/olive oil dressing, but It's really hard! (And that lunch should have been tomorrow's, which I had to eat as today's was really weird!)

This is not an easy way of eating at all! When I did it the first time, I lost two stone in three months and kept it off for a few more months. But as soon as I added carbs back in I gained it back. The thing with me now, is I have to do it for health reasons. Which does motivate me a lot more. Plus I'm on meds for it now as well. The meds help with the cravings, and also cause stomach problems if I eat to many carbs. (sorry for tmi)

Anyway, I'm up for being a low-carb buddy if you want and/or need it.

Of course buddy :) I'm doing it for health reasons as well, I'm trying to get my body in order in case the boy and I ever want a baby :-X -  dratted PCOS  ;D.

Alot of the low carb recipes I find are mental! Like I see a lot of pork rind "breaded" chicken....I know you're supposed to be low carb and can eat all the pure fats/oils you want but breading in pork rinds? Seriously? :) Just sounds wrong!

So I'm going to investigate some books on the way home.

It's hard because I'm working 24/7 at the moment and the vending machine at work isn't very low carb friendly! :)

Cool!  PCOS stinks huh!  I had no idea I had it till four years ago.  (I didn't have any of the usual symptoms) 

Ewwweeee!!!  That sounds gross!  And not right at all!

I keep almonds handy.  A few go a long way.

Have you tried those oven roasted almonds they just started selling here in the US? Really good!

There are people who make pancakes and a whole lot of stuff with pork rinds (IIRC, there's a youtube video with a woman making pork rind pancakes).  I've just crushed them up and used them in tuna salads along with things like sprouts to give it crunch.  I have a hard time eating them as they are.

For coatings, I use crushed almonds, herbs and spices and do a faux shake and bake thing.  Other people use hard, crumbled cheeses like Parmigiano-Reggiano.  My husband hates those cheeses so I can't try it out.

Are pork rinds hard?  For some reason I just imagined some fat cut off some pork products. (LOL, I can see that was not right!)  Pancakes!!!  WHAT!!!  Wow, that would never occur to me.  I'm going to have to google it now.

The almonds and cheeses sound like a great idea.

Pork rinds here are very hard and usually have flour coating them.  Pork rinds in the US are sort of like Styrofoam...like those funion things.  They gross me out a bit, that's why I mix them in with things.  When I first was low carbing, they really kept me from cheating a few times.  I haven't had them in so long now though.

Yes. We just bought some and I'm pretty impressed. I'm trying to use them to curb snacking.

Will any nuts do for snacking? I'm quite partial to pistachios and to cashews :)
I can totally see how pork rinds would be a good snack, but the idea of breading chicken in them just sounds wrong! :)

I think most nuts are good as long as they aren't roasted in oil - but that might be different for low carbing...

I think in moderation they are also fine.  Though just looked at the cashews we have and they seem a bit high :(

I think Almonds are lowest in carbs.

The blue diamond one come in  cinnamon and vanilla flavors, I need to try those.

Peanuts are higher because they aren't nuts but legumes. Cashews, I guess, are seeds.  Macadamia nuts have a good ratio provided you can stop eating them after a few.
