Quinoa salad with dried apricots and baby spinach. The Moroccan-spiced lemon dressing is so good, I could eat it with a spoon.

For the US crowd, I HIGHLY recommend Trader Joe's unsulfured Blenheim apricots - they're amazing. Only ones I'll eat.

So, I've heard a lot about Quinoa and these recipes look pretty good - but I've never tried it before. What is it like? Does it have much flavour, or do you use stock and seasonings to flavour it? Just curious...

It's a bit like brown rice in that it has a nutty flavour of its own, but will take on the flavours of anything you cook it with.  It's actually a seed.  The grains are small and round with a weird ring-like thing around each one.  Here's the Wikipedia entry on it.  http://en.wikipedia.org/wiki/Quinoa

You should try it, Jewlz, it's really versatile and super healthy.  And tasty.

OK, so it sounds like something I would absolutely love... and DH would hate!  :P He is very much a meat and potatoes guy - he doesn't like rice, pasta, or cous cous very much. But, maybe one day I will have the initiative to make it just for me.  :)

My DH absolutely HATES it, but he likes couscous, so go figure! I think it might be the texture that puts him off.

I like mixing some quinoa into tabbouleh (it goes nicely with the bulgur). I also like including it when I make stuffed peppers, tomatos, and courgette (just add cooked quinoa into the mix with the onion, pepper, spices and meat).

My old roommate even used quinoa in her meatballs (instead of rice).  

I haven't served it to my husband yet. I am still trying to get him to accept brown rice or wild rice on occasion.
