Can someone post a recipe that might actually make me like it?  :-\\\\
I'm not a big fan, but FIL gave me lots of it from his garden and I was hoping to give it another try. I had it pickled or plain last season and it was edible, but not my fave.

I don't like them pickled. That's too much. But I like them marinated in white vinegar and a little bit of white onion. I usually do it like an hour before dinner. They're yum!

(That's with pre-cooked, obviously)

I like them roasted! I hate them plain, or cold in salads ick.

OK, well it appears these have already been boiled and peeled by my FIL. They are small and sort of oblong shaped, like a baby carrot. How long do they stay good? They have been wrapped in plastic and in the fridge since he brought them over.
I had some once in a restaurant where I worked once, roasted and drizzled with maple syrup, I think. They were pretty nice then. Maybe I don't like them boiled? Maybe I should ask FIL to bring them over raw instead?  ???

This recipe seems similar to what you mentioned, but it uses boiled beets

I also like them cut finely and mixed with horseradish. We always have that on Easter with our meat/cheese/cracker platter!

Hmmm... the horseradish sounds delish! I love horseradish! But haven't seen any around here, I don't think. Is it available here in UK?

I just looked it up on tesco.com. It is mostly "horseradish sauce" but there were a few that said "grated horseradish" from the Polish section. No photo or further information. Maybe try looking there?

I know the green grocer I used to go to in Bath had big chunks of fresh horseradish. You'd just need to peel and grate it.

Agreed. Mmm, I love real maple syrup... There is a maple syrup farm in PA, a few hours north of Pgh. Every now and then my parents would go get a HUGE jug of it. ;D It was so fresh and yummmm. I could never eat Log Cabin again. :P

I just saw them make this on Daily Cooks Challenge. I thought the beetroot and avocado salad was interesting!

I had a friend who sliced up some beetroot and avocado, then sprinkled it with balsamic vinegar. Delicious!

ETA: the recipe doesn't show it for some reason, but she marinated the mackerel in the garlic, lemon juice, and olive oil.

I just cooked beetroot for the first time last night. My only prior experience was pickled ones in the States, which I loathed. I kind of liked them boiled, peeled and plain. I can't imagine making sammiches out of them, as DH suggested, but as it's one of the few veg he'll eat, I'm at peace with them.
