Topic: Concentrated Chicken Stock in the US  (Read 2508 times)

Concentrated Chicken Stock in the US

Anyone know if I can get this here?  Sort of like Knorr Touch of Taste in the UK.  I'm dying to make Q-G's White chili.  I've got everything else but this.

Is it more like a demi glace than stock?  Because I think you can find that in upscale markets.

Is it more like a demi glace than stock?  Because I think you can find that in upscale markets.

I was just going to say that! I used to always use chicken demi-glace from Williams Sonoma!

I've never heard of demi glace before either... but the concentrated stock Stacey is talking about is thick liquid... like a thick gravy or sauce.

stacey, when i lived in NJ last year, i bought a product called Better than Bouillon, in a small jar.  regular grocery stores carried it.

Demi-glace is super-concentrated rich sauce used in a lot of French cooking. It's amazing stuff. You only use a smidge and it makes things taste wonderful!

Yup!  It's basically stock that has been cooked further down to a thicker consistency.  Bigger flavor, less water. :)

Cook it down in a pan?  Can you do that?  I could try :D
